These are three of my favourite sandwich fillings, along with jam sandwiches, and Watercress and Egg & Cress sandwiches. They make a wonderful trio for all, with a punchy Three Cheese Savoury filling, a classic Coronation Chicken filler and an elegant Cream Cheese & Cucumber filling. I have a Cheese Savoury sandwich filler already posted on Lavender & Lovage, however, this version relies on cream cheese as the filler, with Red Leicester and Cheddar cheese adding to the mix. You can also add finely chopped spring onions to this fabulously cheesy sandwich filling, or even chives or wild garlic when it's in season. My classic Coronation Chicken recipe for today's A Trio of Afternoon Tea Sandwich Fillings, is an easy one, and perfect for using up any cold cooked chicken. It's simply a melange of cold cooked chicken cubes, with mayonnaise, curry powder, mango chutney OR apricot jam, spring onions, with optional sultanas and flaked almonds. Finally we come to the simplest of sandwich fillings, but the one that is my most popular at picnics, afternoon tea and my Sunday tea tray suppers......Cream Cheese & Cucumber. I use a well-known (and high quality) cream cheese that is flavoured with herbs and garlic, good salted butter and thinly sliced cucumbers. I usually make these in crustless white bread, but we enjoyed them last time I made them in wholemeal (wholewheat) bread. I
