My hubby and kids love it when I fix this! I found this recipe in the cook book Fast Fixes with Mixes. You can find it on amazon, check it out! 1 lb fully cooked kielbasa or polish sausage, halved and sliced 1/2 inch thick 2 tbps vegetable oil 1 package au gratin potatoes 2 1/2 cups water 1 package (8 oz) frozen california mix veggies 1-2 cups shredded cheddar cheese 1. In a skillet, cook sausage in oil until lightly browned. Drain. 2. Add potatoes with contents of sauce mix and water. Cover and cook over medium heat for 18-20 minutes or until the potatoes are almost tender, stirring occasionally. 3. Add veggies, cover and cook for 8-10 minutes or until potatoes and veggies are tender. 4. Sprinkle with cheese. Remove from the heat; cover and let stand for 2 minutes until the cheese is melted. YIELD: 4 servings NOTE: The milk and butter listed on the potato package are not used in this recipe.

This is a Gooseberry Patch recipe;submitted by Teresa Podracky. It is a quick weeknight supper that takes less than 25 minutes to get from stove to table. I have changed it from oil to coconut oil and from regular cheddar to light cheddar cheese to make it diet friendly.
