Eigentlich dürfte dieser leckere Schmortopf gar nicht das Wort Roulade beeinhalten, kommt es doch von rouler = rollen und gerollt wird hier mal so gar nichts. Das Rouladenfleisch wird einfach in Streifen geschnitten und schmort mit den üblichen Verdächtigen Bacon, Gewürzgurken, Senf und Zwiebeln zu einem genialen Gericht mit viel Geschmack und noch mehr Sauce. Zutaten & Zubereitung ca. 3 Portionen 550 - 600 g Rinder-Rouladenfleisch, ich hatte 3 relativ große Scheiben 1 EL Butterschmalz Rouladenfleisch in 1 cm breite Streifen schneiden. Butterschmalz in einer großen Pfanne erhitzen und Fleisch darin kräftig anbraten, bis es rundherum ordentlich Farbe hat. Ich benutze eine Guß-Viereckpfanne mit hohem Rand, zu der ich einen Deckel habe, in der kann ich auch gleich schmoren. Fleisch aus der Pfanne nehmen. 100 - 150 g Baconwürfel (ich hatte 200, war ein bißchen viel) 300 g Zwiebeln, halbiert und in schmale Segmente oder Halbringe geschnitten Bacon in der Pfanne knusprig auslassen, Zwiebeln zufügen, Hitze etwas reduzieren und 10 Minuten schmoren. 100 g kleine Gewürzgurken, in dünnen Scheiben 1 gehäufter EL Tomatenmark 2 gehäufte EL mittelscharfer Senf Gurken, Tomatenmark, Senf und das Fleisch in die Pfanne geben, umrühren und kurz braten. in die Pfanne geben. 150 ml Rotwein Rotwein zugießen, aufkochen und verdunsten lassen. 750 ml Rinderfond Fond angießen, aufkochen, Hitze reduzieren, so das alles grad so köchelt und zugedeckelt 1,5 - 2 Stunden garen, bis das Fleisch zart ist. Mit Salz abschmecken, ich habe nur eine Prise gebraucht. 1 gehäufter TL Speisestärke Speisestärke mit gerade soviel kaltem Wasser anrühren, daß sie flüssig ist, zum Rouladentopf geben und erhitzen, bis die Sauce bindet, das geht ruckzuck. meine Tips: wenn man keinen Wein verwenden möchte, einfach durch Fond oder Wasser ersetzen aufgewärmt schmeckt der Rouladentopf nochmal so gut zum Rouladentopf paßt als Beilage eigentlich alles, Nudeln, Kartoffeln, Reis, Knödel, Klöße oder Brot/Baguette
