Thanks to all the nuts, seeds and psyllium husk it’s packed full of fibre, protein and good fats, all of which help to lessen any blood sugar spikes meaning you stay satisfied and full for longer (PMID: 33846643). A high-scoring bread recipe amongst those of us who have poor blood sugar control is something you’ve been asking for so we’re so happy to share this delicious recipe! The best thing about it is that it requires no needing and it’s all mixed in the loaf pan itself and only takes about 10 minutes of active cooking time. 135g sunflower seeds 90g flax seeds 65g nuts (we used almonds) 145g oats 2 tbsp chia seeds 4 tbsp psylium husk 3 tbsp olive oil 350ml water 1 tsp salt Mix all the dry ingredients in a lined loaf tin, mix together the oil and water and pour over the dry ingredients and mix well until everything is combined into a thick dough. Smooth out the top and leave for at least 2 hours. Place the bread into the oven at 175C for 20 minutes then remove the bread from the loaf tin and flip upside down to bake for a further 40 minutes.
