Ingredients: 1 1/2 lbs chicken thighs, 3 tablespoons avocado oil, 1 diced red onion, 2 cloves minced garlic, 1 cup chicken bone broth, 12 oz jar chunky red salsa Spices: 2 tsp salt, 1/2 tsp pepper, 1 tsp cumin, 1/2 tsp smoked paprika, 1/2 tsp paprika, 1/4 tsp dried oregano, 1/4 tsp garlic powder, 1/4 tsp onion powder Combine the spices in a small bowl and coat the chicken thighs. Heat 2 tblsp avocado oil in a Dutch oven over medium heat-high heat. Sear the chicken on each side 3-4 mins a side. Once chicken is seared, remove the chicken and lower the heat to medium. Add remaining oil and onions and cook until translucent. Add garlic and cook until fragrant. Add bone broth and salsa, bring to a simmer, then simmer for 3-5 mins. Add chicken back to Dutch oven, cover, and simmer for 25 mins.
