I don't want to offend anyone with the name of one of our favorite salads but… My husband's brother is a wonderful chef. He studied in Europe and has worked at some of the top restaurants in the United States. Years ago he stayed with us and made us a salad, a salad of iceberg lettuce topped with cheddar cheese. Not the typical culinary creation of a top chef. It was delicious and refreshingly different, but non-the-less we dubbed it The White Trash Salad. We often make it as a tossed salad, but recently we have turned it into a wedge. One of the best components is the dressing... 3 tablespoons red wine vinegar 2 cloves garlic, finely chopped 3/4 cup olive oil 1 tsp dried oregano place all ingredients in a jar or bowl and let them sit at least 30 minutes… (Uncle Paul says that is the key) get your wedges ready and sprinkle with salt...
