RECIPE -2 big eggplants Peel like a zebra. Brush with some olive oil. Bake at 200C/400F for 30mins. Filling: -1 onion -2 cloves garlic -2 red peppers Fry in oil 4-5mins. -150g soy chunks (cook in 300ml veg stock until it’s evaporated) -3 Tbsp tomato paste -1 Tsp each cumin, ground coriander, salt, paprika -1/2 Tsp chili powder -1/2 cup (120ml) passata Let it simmer until the eggplant is done. Stir in some chopped parsley. Add some filling and bake for another 30mins.
