The customer wanted chocolate cake with mocha buttercream filling. So I baked three eight inch layers of chocolate cake in my three inch tall baking pans which is the size I always use except for those bottom two layers I made those as tall as I normally do for all of my cakes. And for that top layer I made that one really thin it was about less than an inch tall and honestly I could have made it a little bit shorter. But anytime I'm carving a sculpted cake I always think it's better to have extra than not have enough. So I carefully and slowly be to carve away and my goal is for the cake to have a dome shape. I finally stop cutting once I'm happy with the shape of the cake and then I make a batch of vanilla buttercream. I grabbed my cake spatula and began a crumb coating. This part is really important because I'm going to have to leave a really smooth buttercream base before I add my fondant. Once I'm done adding that thin layer of frosting, I grab my cake scraper and remove any extra buttercream off of the cake. And then I take it to the freezer and leave it in there for about 15 to 20 minutes. I take it out I apply my final coat of buttercream. I try to spread this as evenly as possible because now comes the most time consuming part. Which is getting that frosting to be really smooth with absolutely no edges. And to achieve that I start off on the bottom using my acrylic cake scraper. I then moved on to a small spatula. And I finished it off with this silicone scraper. Now finally this cake is ready to be covered. I made a large batch of fondant and then colored using Americolor's super black. Right away I did have excess fondant hanging down so I just grab some scissors and cut it off. But I always make sure to only cut what's hanging over A board you never want to be too short. Next I just begin working that fondant. I'm pressing it down against the buttercream. Always use one hand to pull out the fondant and the other one to smooth down. I grab my fondant smoothing tool and press it against the sides of the cake to make sure everything is good. And then using my roller cutter I gently and very slowly cut off all of the extra fondant. I take that off of the cake board and then I roll it out on the counter once more. I placed it flat on the board right in front of the cake. And then I cut this to the exact shape that I wanted which can be a little bit tricky to get a symmetrical cut. But once I'm happy with that I grab this small fondant tool. And then carefully begin making these vertical lines that go all around the cake to make six different sections. Once I'm satisfied with the placement of those lines I go in once more and press a little bit harder to make a deeper impression. And then I get this pinwheel fondant tool. Which is one of my favorites. It makes this sort of stitching design. And I slowly roll that down to Both the right and the left side of each one of those vertical lines. It is super easy to slip up with this tool and end up with a crooked line. So I always try to go really slow when I'm using this. But now that all the stitching is done, I move on to the main part of the cake which is the front design. It is the Valley logo for the Phoenix Suns on this edible sugar sheet. It did take me a while to cut this out just because of that sort of pixelated design. But I think it looked incredible once it was on the cake. I stuck it onto the fondant using clear piping gel which worked really great especially with all of the corners and edges. I then placed this black circle right on top as well as six smaller ones that have a circle cut out at the center. I placed those right in between each of those six sections. Then I cut out and place this new era logo to the side. And then using that same flat fondant tool. I carefully outlined this bottom piece of fondant about three or four times. Next I cut out and placed this gold new era sticker. The customer also let me know this in specific Size so I made sure to include that. Then using a small round piping tip, bag up some white buttercream and pipe his name which is Hess to the side. And last I add a birthday banner that says happy fortieth birthday Hess. This is definitely one of my new favorite hat designs and I hope you guys enjoyed watching.
