Ingredients (serves 2): - 2 large chicken breasts - 2 handfuls cherry tomatoes - 60g reduced fat soft cheese or single cream - 2 tbsp red pesto - 10g Parmesan cheese, grated - 200ml chicken stock (from a cube) - 1 tsp paprika - 1 tsp mixed Italian herbs - 1 tsp garlic (minced/powdered) - Salt and pepper to taste - Basmati rice and broccoli (to serve) Method: 1. Preheat oven to 200°C (392°F). 2. Place chicken and tomatoes in an oven dish, drizzle with oil. 3. Season with paprika, herbs, garlic, salt, and pepper. 4. Make chicken stock, stir in soft cheese. 5.
