Im Spätsommer ist Zwetschgenzeit und viele Feinschmecker können es kaum erwarten, bis Sie endlich wieder einen leckeren Blechkuchen mit Zwetschgen oder frische Zwetschgenmarmelade essen können, denn dafür eignet sich die blaue Frucht besonders gut. Doch die Zwetschge ist noch vielseitiger einsetzbar, z.B. eingemacht oder gebraten, süß oder pikant. Woher kommt die Zwetschge? Die Zwetschge ist eine Baumfrucht und stammt ursprünglich aus Asien. Sie ist eine Unterart der Pflaume, weshalb es oft auch zu Verwechslungen der beiden Früchte kommt. Für Laien scheint es keinen großen Unterschied zwischen den beiden Früchten zu geben, doch den gibt es! Die Zwetschge gehört zur Familie der Rosengewächse. Sie ist in Europa weit verbreitet und sehr beliebt. Allein in Deutschland gibt es 13 verschiedene Zwetschgensorten, wie z.B. die Bühler, die Cacaks Beste, die Ortenauer, die Lützelsachser oder die Hauszwetschge. Wann ist die Zwetschge reif? Die Reifezeit der Zwetschge beginnt im August. Eine reife Frucht erkennt man an ihrer Farbe: sie ist blauviolett bis schwarzblau. Die Form der Zwetschge ist oval, sie läuft an beiden Enden eher spitz zu. Sie hat eine kaum ausgeprägte Fruchtnaht und lässt sich leicht von ihrem Kern lösen. Sie schmeckt süß-säuerlich und ist gleichzeitig auch sehr gesund. Das liegt daran, dass Zwetschgen viel Kalium, sowie Vitamin C und B2 enthalten. Welche Wirkung haben Zwetschgen? Getrocknete Zwetschgen sind vor allem für Ihre abführende Wirkung bekannt. Eingeweichte gedörrte Zwetschgen helfen bei Nierenerkrankungen, Gicht und Problemen der Leber. In der Regel wird die Frucht trotz ihrer positiven Nebenwirkungen, eher auf Grund ihres guten Geschmacks verspeist. Wie wird die Zwetschge in der Küche verwendet? Typischerweise wird die Zwetschge im Kuchen verwendet, aber es geht auch anders. Zwetschgen harmonieren beispielsweise hervorragend mit deftigen und herzhaften Speisen, wie z. B. Schweinefleisch, Wild und Geflügel. Weil er einem Mädchen aus der Nachbarschaft eine Freude machen wollte, die ihn mit ihren Gesang wieder fröhlich und gesund machte. Der Unterschied zwischen Pflaumen und Zwetschgen Doch genug von der Zwetschge. Kommen wir zu den Unterschieden zwischen der Pflaume und ihrer Unterart, der Zwetschge. Die Pflaume ist rund, dick und schmeckt süß bis herb. Ihr Fruchtfleisch ist saftiger als das der Zwetschge. Auch farblich unterscheidet sich das Fruchtfleisch, denn das Fleisch der Zwetschge ist gelb und das der Pflaume geht ins rötliche. Die Schale der Pflaume variiert in ihrer Farbe zwischen schwarz, blauschwarz, blau, blaurot, violett, purpurrot, rot, gelb und gelbgrün. Außerdem hat die Pflaume eine deutlich sichtbare Fruchtnaht. Pflaumen enthalten mehr Wasser als die Zwetschge und eignen sich deswegen weniger ideal für Kuchen. Ein weiterer Unterschied der beiden Früchte ist, dass sich der Kern einer Pflaume schwerer vom Fruchtfleisch trennen lässt, als der einer Zwetschge. Zu guter Letzt ist die Blütezeit der Pflaume schon viel früher (April/Mai). Pflaumen sind nicht so vielseitig in der Küche einsetzbar. Meistens werden sie in Form von Marmelade (Rezept), Kompott (Rezept) oder Likör(Rezept) verwendet. Trotz der Unterschiede, haben sie doch eins gemeinsam: beide Sorten sind gesund und lecker!
