Ma'amoul (maamoul) to bardzo popularne w krajach arabskich i Izraelu kruche i aromatyczne ciasteczka. Są robione z dodatkiem zapachowych wód kwiatowych, więc w domu roznosi się piękny zapach podczas ich pieczenia. Mamulki (jak je pieszczotliwie nazwałam :) ) przygotowuje się z różnymi nadzieniami, najczęściej orzechowymi, chałwowym lub daktylowym. Poniżej przedstawiam przepis na wersję z orzechami włoskimi i cynamonem. Przepis na maamoul z pistacjami, kardamonem i wodą różaną. Do nadania kształtu ciastkom użyłam tradycyjnych foremek, ale jeżeli ich nie macie to możecie uformować z ciasta kulki, a następnie zrobić na nich dowolne wzorki widelcem. Wczoraj sprawdziłam i podobne foremki są dostępne na Allegro. Przepis ze zdjęciami krok po kroku. Jeżeli przygotowałaś/eś danie z tego przepisu, prosimy o jego zdjęcie :). Składniki na ciasto: 200 gramów mąki pszennej 100 gramów kaszy manny (drobnej semoliny) 50 gramów skrobi kukurydzianej 150-170 gramów miękkiego masła 60 gramów cukru pudru 3 łyżki oleju szczypta soli 1 łyżeczka esencji waniliowej 1 łyżka wody z kwiatów pomarańczy (lub 2 łyżki soku pomarańczowego albo 1 łyżeczka świeżo startej skórki pomarańczowej) Składniki na farsz: około 200 gramów orzechów włoskich (waga bez skorupek!) 1-1 i 1/2 łyżeczki cynamonu lub przyprawy do piernika 25 gramów miękkiego masła 50 gramów cukru Wykonanie: 1. Zagnieć ciasto ze wszystkich podanych składników. Na początku dodaj do niego 150 gramów masła, a jeżeli ciasto będzie ciut za suche, to dodaj więcej masła. Masa ma być plastyczna. 2. Zawiń ciasto w folię spożywczą i wstaw na godzinę do lodówki. 3. W międzyczasie zmiel orzechy razem z cukrem na mąkę. 4. Dodaj do nich cynamon i masło. Po wymieszaniu powstanie aromatyczna pasta. 5. Zrób kulkę z kawałka ciasta, a potem ją rozpłaszcz. 6. Ułóż na środku placka niewielką ilość masy orzechowej i ponownie zrób z ciasta kulkę. 7. Włóż kulę do oprószonej mąką foremki. Wciśnij ciasto i wyjmij gotowe ciastko. 8. Połóż ciastka na blasze wyłożonej papierem do pieczenia (nie natłuszczałam go). 9. Piecz w piekarniku nagrzanym do 180 stopni C przez około 20 minut. 10. Zimne ciastka oprósz cukrem pudrem. Smacznego :)
