Making an elderberry winter tonic for your family is really pretty simple. I used to pay a ton of money for this very same medicine each year before I knew how to make my own. These instructions are for fresh elderberries, but you can also use dried ones, in case there aren't any elder trees in your area. Even if you need to buy the berries instead of collecting them for free, it's a much cheaper option for getting this great medicine, and totally worth the small effort of making it. And one more thing... it's delicious.

We have had a great crop of elderberries this year and faced the big question of what to do with such a bounty — Freeze? Can? Ferment? Sigrún woke up a bit earlier than usual, the promise of a wondrous day outside beckoned her out of the warm blankets. Timid naked feet poked out of the bed, to slip inside cozy slippers. A warm rug welcomed her stance, she stretched, yawned and looked out the window. Still darkness. Much to do.
Adapted from Tartine's most delicious recipe. Find the Lemon Cream recipe here. UPDATE: I recently re-wrote the recipe as a half recipe, because I found myself always making the half recipe, which yields a more manageable amount (6 to 8 as opposed to 16-18). As always, for best results, use a digital scale to measure. Sugar: You can sprinkle the scones with granulated sugar before baking, but turbinado sugar makes for an especially tasty and pretty crust. Salt: If you are using Morton Kosher salt or fine sea salt, use half as much by volume or the same amount by weight. To freeze: After you place the scones on a sheet pan, transfer them to the freezer. Freeze until solid; then transfer the scones to an airtight container or bag. When you are ready to bake, there's no need to thaw them. Bake as directed below straight from the freezer. (Brust with butter and sprinkle with sugar before baking.) The scones shouldn't take much longer to bake from frozen, but keep an eye on them at the 20-minute mark. To make your own buttermilk: Place 1 tablespoon of vinegar or lemon juice in a liquid measuring cup. Fill cup with milk (2% or whole is best) until it reaches the 1-cup line. Let stand for five minutes. Use as directed.
