When I told a nice lady friend about my poor results, she told me I would have better luck if I took cuttings from the tips of the plant. Since taking her advice, I have had near 100% success.

It's real tasty! I love it! No dip needed, I can just eat it plain :) What you need: 1 whole large zucchini 1 tbsp minced garlic (I used 3 cloves) 3/4 cup breadcrumbs (I used panko) 1/2 cup grated parmesan cheese 2 eggs (I used 3 - probably due to the size of zucchini I used) salt, black pepper olive oil (I used canola) - for frying Method: Wash and cut the end off of one large zucchini. Shred it using the large holes of a cheese grater. Squeeze the shredded zucchini inside of a clean towel until you’ve removed as much liquid as possible Place shredded zucchini into a medium sized bowl. Add minced garlic, breadcrumbs, cheese, eggs, salt and pepper to taste. Stir with a fork until well mixed Heat oil (about ¼ inch deep in bottom of skillet) to a medium heat. When the oil is hot enough drop a glob of zucchini batter into the skillet and flatten it a bit. After about two minutes, turn the cakes over ( they should be nice golden-brown) and cook on the other side until done (about 2-3 minutes) Arrange over a kitchen towel to drain excess oil. This week we are wrapping up our plant unit. I am pretty sure that my kiddos are going to be way more successful than me when it comes to having a green thumb. Everything I plant….dies. It is a tragedy. I mean you would think after refreshing up on plant needs every year that I would be able to open up a vegetable stand or something, but notsomuch. Anyways, yesterday, my kiddos made these little plant flip craftivities about the needs of plants. I just love how they turned out. The kiddos had to draw a picture and label the 4 different needs of a plant under each leaf like so… You can get the Plants Need Flip Craft {here}. We also had some fun with taste testing yesterday. After reading this book: Tops and Bottoms by Janet Stevens we sorted tops and bottoms and once those were all complete…we began tasting! Each kiddo got a carrot and a piece of celery to taste. The facial expressions were hilarious! Some were all smiles begging for more,…and some had the look of disgust! I mean! I actually had one little love tell me that they did not need to try them because they already knew they didn’t like the tops OR the bottoms of plants! Hilar! Looks like carrots (the bottoms) are a favorite in our room! …and we finished all our T.Rex Cottontails! Love how this little friend spelled “children”.
