Recipe below>>> I need to stop for a moment and tell you how much I love Poppyseed Dressing. Unfortunately, the feeling is not mutual. It doesn't love me back. It makes me gain weight by the truckload. {There's a part of me buried deep down that thinks I should kick this dieting gig to the curb and just be fat and happy. But, that's for a different blog post entirely. Ahem.} I've made a Chicken Poppyseed Fruit Salad for eons with the regular bottled Poppyseed Dressing. On many occasions, I quite possibly ate more dressing than fruit. Possibly. I finally sat down and tinkered with a few Poppyseed Dressing recipes to come up with a lightened version that works well for me. When I plugged it into my Weight Watchers Recipe Builder, I can have 1/4 a cup for three points. I know, I know, that's a lot of dressing. If you're more sensible than me, you can have two tablespoons for one point. But, since the points of the salad I use this on are made up of only the chicken {I use all zero-point fruits}, I can eat a pretty large salad. So 1/4 cup it is. This is a no-judgement zone. Skinny Poppyseed Dressing Ingredients: - 1/3 cup mayonnaise - 1/4 cup light, unsweetened coconut milk {in the dairy case} - 3 tablespoons sugar {I've been trying to back away from the artificial sweeteners and the sugar doesn't add too many additional points here}. - 4 teaspoons cider vinegar - 2 teaspoons poppy seeds Directions: Whisk all of your ingredients together and refrigerate overnight.
