This is a Dutch favorite, though I've seen them recently at Starbucks (horribly overpriced, of course). If you don't have a "pizzelle" iron, don't despair. There's a super-easy shortcut: just buy waffle cookies at your supermarket (and Trader Joe's has some really fantastic cookies for sure). That's what I ended up doing, so don't think I am a whiz at pizzelle making! I halved this recipe, and was still able to have filling leftover when I made 12 cookies. I think this recipe is for filling full sized (6-8 inch) cookies. So plan on having quite a few cookies if you are using store bought cookies (3-4 inch). Ingredients • 1 1/2 cups all-purpose flour , or a combination of AP and whole wheat flour • 1 tablespoon baking powder • 1/2 teaspoon salt • ¼ cup granulated sugar • 1 1/4 cups milk • 1 egg • 3 tablespoons butter, melted • 1 tsp. vanilla Directions The night before serving: In a large bowl, *sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. *If you don’t have a sifter, shake the flour through a strainer. This incorporates air and keeps the pancakes fluffy. Important: Cover bowl with wrap and let this mixture sit in the refrigerator overnight. This allows more air bubbles to form, insuring a light and fluffy pancake. Next morning: Heat a lightly oiled griddle or frying pan over medium high heat, or spray a griddle pan with non-stick spray. Without stirring (which would deflate the air bubbles), scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. (You can use a ¼ c. (or larger) measuring cup. I use a levered ice cream scoop). Brown on both sides and serve hot. You can embellish these any way you like, by adding blueberries, chocolate chips, nuts, etc. to the pancake batter on the griddle, just before turning it over to brown on the second side. But I vowed that this time I wouldn’t use it once then consign it to a cupboard under the stairs, and I’ve been as good as my word and have turned into something of a weekend waffler. How long you cook the waffles for, as well as how many you make, will depend on the waffle iron you’re using. Mine is a sturdy, non-stick stove-top Belgian waffle iron, which takes 250ml / 1 cup of batter per batch; if you’re operating a different machine, follow the directions for quantities and cooking times that come with it. I advise you to preheat your oven to 120°C/100°C Fan/200°F before you start so that you can pop the waffles on a wire rack over a baking sheet as you make them, to keep them warm. This also helps to give them a lovely crisp crust. For US cup measures, use the toggle at the top of the ingredients list.

I lay no claim to the authenticity of this recipe. This recipe has been in my husband's family for years (hubby's grandparents were from Switzerland.) When my in-laws prepare these, the pancakes are folded up without any filling but I take it a step further and add all sorts of goodies, depending on the season (read my suggestions below). If you are limiting your cholesterol intake, do not substitute more than half of the eggs with an egg substitute. This yields something identical in taste to French crepes, except these pancakes are larger and thicker.
