Root vegetables and onions are best stored at room temperature — not in the refrigerator. But aside from taking up space on your pantry shelves or on your kitchen counter, what’s the best way to store them in your kitchen? Here are several ideas for the best ways to store all your favorite root vegetables, no matter how much space you have in your kitchen.

CULTURAL INFO Carrots are often classified by their root shape: Nantes – Blunt tips; straight, cylindrical roots 5 to 7 inches long; sweeter than most other types; good raw eating. Prefers loose soil. Chantenay – Shorter than other types, stocky, taper to a rounded tip; rich, sweet flavor and good storage potential. Coarser texture than others. Imperator – Long, tapered roots with stocky shoulders and strong tops; slightly fibrous texture. Stores well.Most common type found in groceries. Prefers deep, sandy soil. Danvers – Shorter than Imperator varieties, thick-rooted cylindrical shape, widely used in processing, good for juicing. Stores well. Performs well in heavy, clayey soil. Soil Nutrients and Requirements Do best in fertile sandy loam, but will perform well under most conditions if appropriate varieties are chosen. For compact soils choose tapered carrots that can wedge their way into soils like Chantenays or Danvers types. Optimal soil temperature for germination is 55-75°F. Best quality arises from raised beds, free of stones and debris. Imperator types should only be grown on raised beds that have 10-12” tilled zones. Seeding Depth 1/4-1/2" Plant Spacing Thin to 1-2" depending on desired size Row Spacing 18-24" When to Sow Direct seed as soon as soil can be worked in the spring through mid-summer. Other Considerations Weeding shortly after germination allows slow-growing carrots to get a head start against fast-growing weeds. Harvest Harvest when carrots have appropriate coloring and flavor has developed. Carrots hold well in the field for up to 3 weeks in the summer and longer in cool conditions. Some varieties, like Napoli, may be over wintered outdoors or in the high tunnel for an early spring harvest. For storage carrots dig roots after frost but before ground freezes. Storage Store topped carrots in near freezing temperatures with high humidity. Unwashed carrots store just as well as washed but may stain during storage. Pest Info Carrot Weevil and carrot rust fly are common pests. Floating row cover can be an effective control for the Carrot Weevil and Carrot Rust Fly. Other tips include delay sowing seeds until June to avoid the first wave of flies, as well as sowing carrots seeds thinly, as the carrot rust flies are attracted to the smell of bruised carrot foliage. Popular supermarket carrot. ***CARROT GROWING GUIDE BELOW*** Carrots are a popular root vegetable that are easy to grow in sandy soil. They are resistant to most pests and diseases, and are a good late season crop that can tolerate frost. Not all carrots are orange; varieties vary in color from purple to white. PLANTING Plan to plant seeds outdoors 3 to 5 weeks before the last spring frost date. Make sure your soil is free of stones; carrots need deeply tilled soil that they can push through. Have you ever seen a carrot that has grown “legs” or forked? Fresh manure, or even recently applied rotted manure, can cause carrots to fork and send out little side roots. Don’t use it before you plant your seeds. Plant seeds 3-4 inches apart in rows. Rows should be at least a foot apart. PLANT CARE Gently mulch to retain moisture, speed germination and block the sun from the roots. Soil should be well drained and loose to prevent forking and stunting of the root growth. Once plants are an inch tall, thin so they stand 3 inches apart. Snip them with scissors instead of pulling them out to prevent damage to the roots of remaining plants. Water at least one inch per week. Weed diligently. Fertilize 5-6 weeks after sowing. Carrots taste much better after a couple of frosts. Following the first hard frost in the fall, cover carrot rows with an 18-inch layer of shredded leaves to preserve them for harvesting later. PESTS/DISEASES Carrot Fly Wireworms Flea Beetles Aster Yellow Disease will cause shortened and discolored carrot tops and hairy roots. This disease is spread by pests as they feed from plant to plant. Keep weeds down and invest in a control plan for pests such as leafhoppers. This disease has the ability to overwinter. All multiple orders of the same seed are put in the same bag. For example if you order 500 beefsteak tomato seeds x 3 then 1500 seeds will be put in the same bag. Market tip: If carrots still have the tops attached, make sure they are bright green and fresh-looking. Choose cream-colored parsnips that taper gently; this makes it easier to cut uniform pieces. Medium-size rutabagas (about the size of a yellow onion) are best; larger ones can be woody.

Carrots planted for summer harvest will hold in the ground for a few weeks but tend to split if they stay in the ground for too long. Late season carrots hold longer and become sweeter in the cooler weather. Tips: Using a row cover helps to maintain moisture for germination. The Imperator Carrot prefers loose soil, free of rubble. Use the shorter varieties for heavy soils. Keep well weeded and cover any exposed carrot with soil or mulch to prevent greening. An excess of nitrogen in the soil causes the roots to become hairy.

Grow Heirloom Beets - Plant Sugar Beet SeedsThat's right, the name does't lie--sugar beets can give you sugar! A hardy grower, cold tolerant and can thrive in sun or partial shade and, surprisingly for a "sweet" veggie, doesn't require a lot of water. Beets even have a high tolerance for low fertility soil. The Sugar Beet is the ultimate versatile crop, as it can be enjoyed as a sweet root vegetable, leafy greens can be harvested and consumed as well, and of course it can be processed for sugar!Sugar Beet roots are not a typical beet, being a very large white and tapered root. Largely regarded as one of the best crops for your "sustainable" farm.How to Make Sugar from Beets:Once harvested, separate greens from roots. Beets should be thoroughly cleaned and scrubbed with a stiff brush. Sugar beets should then be cubed or shredded with a food processor, then boiled in a large pot with just enough water to cover the beet material. Boiling the beets for about 1 hour will extract the sugar and beet material should be mushy, boiling times may vary based on the size of your cubes and toughness of the beets. Once boiled down, beet pulp should be strained from the liquid through a cheesecloth. Beet pulp can be wrung in the cheese cloth to get the maximum amount of moisture out of the pulp. Sometimes double straining may be necessary to make sure all beet pulp is removed from the liquid--this is necessary or your finished product will not store well. The remaining liquid now needs to be boiled again and reduced down to your desired viscosity. Liquid can be boiled all the way down until crystals form, but reducing to a kind of syrup can also be effective. This process of reducing can take several hours, depending on how much liquid you started with and the starting sugar content of your crop.

Not just the skin that is deeply colored, the midnight purple color goes all the way through to the core.
