Bake Sriracha Tofu Adapted from Leaf & Grain Ingredients: 1 package extra firm tofu, rinsed, pressed, and sliced 1/4″ thick 3 tablespoons finely chopped onion 1/2 tablespoon tomato paste 1/4 teaspoon ground cumin 2 teaspoons tamari sauce 1/2 cup ketchup 1 tablespoon apple cider vinegar 1 1/2 tablespoons agave or maple syrup 2 to 4 tablespoons sriracha sauce 3/4 teaspoon salt Directions: Preheat the oven to 400°F. Place the tofu slices on parchment lined baking sheet and set aside. In a small sauce pot, sauté the onion over medium heat until soft. Stir in the tomato paste and cumin, mixing thoroughly. Add tamari, ketchup, ACV, agave, sriracha, and salt, and simmer for 5-8 minutes, or until the sauce has thickened slightly. Brush the marinade over the tofu slices and place the sheet in the oven. Bake for 20 minutes, then flip the pieces and brush with additional sauce. Bake for 20 additional minutes.

Cette recette aurait pu être incluse dans celle d'un English Breakfast, avec des toasts, des clubs sandwichs, du coleslaw et bien d'autres spécialités d'Outre-Manche. Mais c'est sous une toute autre forme que je vous présente la recette du tofu brouillé, comme j'aime le manger, tout simplement, avec des légumes rôtis, de la salade et un peu de céréales. Je n'ai jamais aimé les oeufs, d'abord parce que je n'aimais pas réellement ce goût légèrement soufré, et parce que je ne les digérais pas. Il n'y a donc pas eu de vraie transition vers le veganisme de ce côté, ce fut simple de ne pas manger un aliment que je n'aimais pas, bien que je m'en servais pour la pâtisserie. Cependant, il m'arrivait de réaliser quelques oeufs brouillés, avec de la ratatouille maison dedans... Récemment je me suis amusée à faire du tofu brouillé pour retrouver cette texture fondante en bouche avec de nouvelles saveurs, plus douces et digestes. Après plusieurs essais, d'abord avec du tofu ferme uniquement, puis du tofu soyeux, et enfin un mélange des deux et même tofu ferme avec crème végétale, j'en suis arrivée à trouver la texture qui me convient. A la fois fondante en bouche et avec de la mâche, apportée grâce aux morceaux de tofu ferme. Côté saveurs j'ai ajouté une touche de curcuma pour la couleur notamment, mais aussi pour ses propriétés miraculeuses anti-oxydantes, anti-bactériennes et anti-inflammatoires lorsque combiné avec poivre et un lipide. Une pointe de cumin s'y ajoute car j'aime sa saveur délicate et particulière, bien que différente de la recette traditionnelle, tout comme la coriandre qui se marie parfaitement avec. La moutarde apporte le piquant nécessaire et la levure maltée ces notes bien spécifiques et magiques dans la cuisine végétale. Un petit goût fromager et entier qui parfait tout plat selon mon avis. Pour l'assaisonnement, une pointe de tamari, un salant naturel à base de soja fermenté, ainsi que de l'ail, de l'oignon et du poivre. Je trouve que toutes les saveurs se mêlent dans ce tofu, se rapprochant ainsi de la fameuse saveur "umami" si bien décrite par les japonais. Pour 2 personnes : - 150g de tofu ferme - 100g de tofu soyeux ou 10 cl de crème végétale à défaut - 1/2 cuillère à café de curcuma moulu - 1 pincée de cumin - 1 pincée de coriandre moulue - 1 pincée d'ail lyophilisé - 1 pincée d'oignon lyophilisé - 2 cuillères à soupe de levure maltée - 1/2 cuillère à café de moutarde - 1 cuillère à café de tamari - 1 cuillère à café de ciboulette moulue - Sel, poivre - Huile de coco Huiler une poêle et y faire revenir l'ail et l'oignon. Y émietter le tofu ferme. Ajouter le tofu soyeux et l'émietter à l'aide d'une fourchette. Incorporer les épices, le tamari et la moutarde. Ajouter la ciboulette. Faire revenir sur feu moyen-vif pour saisir et que les épices se diffusent. Rectifier l'assaisonnement si besoin et servir avec une poêlée de légumes, de la salade et du riz par exemple, ou sur des toasts.
