Deze eenvoudige curry is eigenlijk een ideaal doordeweeks gerecht. Niet teveel ingrediënten, weinig werk. Perfect! Omdat ik niet veel tijd had heb ik gekozen om er pitabroodjes bij te serveren. Ik vind ze lekkerder dan die prefab naans die je in de supermarkt vindt. Wat gaat erin? 3 el ghee of plantaardige olie (type arachide) 1 1/2 kl garam masala 1 kl kurkuma 1 ui fijngesnipperd 2 tomaten in blokjes gehakt 1 rode chilipeper fijngehakt 200 g rode linzen 500 ml groentenbouillon (water + 1 bouillonblokje) 3 zoete aardappelen (bataat) 2 flinke handen jonge bladspinazie Pitabroodjes voor erbij en eventueel gewone yoghurt. Verse koriander als versiering. Doe de ghee* of de olie in een pot met dikke boden en bak gedurende 2 minuutjes de specerijen op een zacht vuurtje. Doe er ook de chili en de ajuin bij en bak glazig. Nu mogen er de tomaten in, de linzen en de bouillon. Laat 10 minuutjes afgedekt koken. Schil ondertussen de zoete aardappelen en snij ze in blokjes (2 cm). Doe er nu de zoete aardappelen bij en laat nog een 10-15 minuutjes pruttelen tot de aardappel zacht is. Doe er net voor het serveren de spinazie bij en laat nog 1 minuutje meekoken tot de spinazie gesmolten is. Echt lekker jong! *Ghee is geklaarde boter die je kan kopen in Indische en Turkse winkeltjes. Deze boter wordt niet zwart bij hoge temperaturen.
