Greek Spinach and Feta Turkey Meatloaf Ingredients: 1 lb. ground turkey 1 tbsp. extra virgin olive oil 1/2 red onion, chopped 2 garlic cloves, minced 3 cups freshly chopped spinach 1 egg, whisked 1/3 cup panko bread crumbs 1/3 cup crumbled feta cheese 1/4 cup tomato paste 1/2 tsp. dried oregano 1/2 tsp. dried parsley 1/2 tsp. dried thyme 1/4 tsp. salt 1/4 tsp. freshly ground black pepper 1 tsp. Worcestershire sauce 1/4 cup sun-dried tomato ketchup for topping Heat the olive oil over medium-high heat. Saute the onion and garlic until softened, about 8 minutes. Reduce the heat to low and add in the tomato paste and spinach, stir to mix and allow the spinach to wilt slightly. Remove from the heat and allow to cool to room temperature. In a large mixing bowl add in the turkey, egg, bread crumbs, cheese, oregano, parsley, thyme, salt, pepper, and Worcestershire together. Mix lightly with your hands, then add in the sautéed veggies. Mix to combine, then pour into a loaf pan sprayed with non-stick cooking spray. Top with ketchup. Bake for 50-55 minutes until cooked through.
