Green seasoning can be found in most Trinidad kitchens as it is the foundational element of our cuisine. It is made by taking a variety of local fresh 'green' herbs and blending it to create an aromatic soupy paste-like mixture. This mixture is then used to 'season' the entire spectrum of Trinidad dishes. Green Seasoning can be used to marinate meat as a base for soups, one-pots, and curries, or you can use it to give depth to a sauce or condiment. There are limitless ways to use this product, and there is no better way to dial up the flavors than by adding some hot peppers! The sky is truly the limit when it comes to the variations of this magical green mixture, so be creative in how you make it and how you use it.

Trinidad's food culture is all about sauces and condiments. This is probably due to the multicultural mixture of people and the cuisines they have brought to our beautiful island nation. Thus, it is easy to see why this fusion has created a plethora of sauces and condiments that can be found in almost all food establishments. Garlic sauce is a condiment that has become an essential flavor to all foods from street, sit-down restaurants, to beach side vendors. This creamy, savory, and slightly tangy sauce drizzled on top or as a dip compliments almost anything you can imagine.

Made with cooked chana (also known as chickpeas) placed on top of two bara (two fried flatbread) and finished with various local condiments depending on what side of the road you find yourself. Cucumber chutney Tamarind chutney, Chadon Beni Sauce, and pepper sauce are some condiments used to add depth of flavor and heat to this dish. This fun, hands-on dish will make your next social gathering flavorful and interactive.
While cucumber’s natural anti-inflammatory properties are great for soothing and hydrating your tired puffy eyes, they also make an excellent snack or condiment like Cucumber Chutney. Not to be confused with Cucumber Relish, this East Indian-influenced Caribbean dish is more akin to a type of salsa. Cucumber Chutney is best known as a condiment found on Trinidad Doubles, a famous Trinidad street food. However, it is also a great stand-alone snack served with crackers or flatbread.

Paratha is an East Indian flatbread, and the name means layered cooked dough. Traditionally, Paratha is made with ghee, a nutty-tasting mixture made by rendering the water and milk solids out of unsalted butter. The layered dough is then cooked on a flat surface known as a Roti Tawa to create a fluffy, nutty, buttery, and chewy flatbread. While all these elements of Paratha remain with the Trini version, we make it out by literally kicking it up a notch during the cooking process. We take this Trinidad Paratha between two wooden spatulas, flip it, spin it, toss it, and beat it up. It is ready once it resembles a ripped-up crumpled pile of an old T-Shirt, which is where it gets its local name, 'Buss Up Shut.' By attacking the mostly cooked dough, we bring out and break up the layers of the flatbread, making it the perfect vessel to pick up food and eat with your hands. After you have ripped off a piece, take the shreds to scoop up some curry or dunk into some sauce before devouring and licking your fingers dry.
