Classic salmon rillettes, a spread made of both smoked and fresh salmon, is bound with butter, flavored with lemon and only lightly seasoned. This version is zestier than tradition would have it, and the two variations that follow are more exotic, but they’re all perfect as an aperitif nibble (they’re made for white wine and sparklers), a brunch dish or picnic fare. I often double the recipe, keep one batch and spoon the other into a pretty canning jar to bring as a hostess gift. This dish doesn’t need to be made with the most expensive salmon, smoked or fresh. If you can buy smoked salmon bits, get them. They’re sometimes cut from the end of the salmon fillet and so they’re a little saltier — taste before you add any more salt to the rillettes. As for the fresh salmon, I’ve had good results using frozen wild Alaskan salmon fillets. If they have skin on them, I put them — still frozen — skin side down in a pot of simmering water for 1 minute and that’s enough to loosen the skin so that it’s easy to remove. Also, it’s okay to poach the salmon when it’s still slightly frozen — just cook for 3 minutes.

C'est un vrai plaisir de la partager. Je l'imagine tout à fait sur la table du réveillon de Noël. De plus, elle sera parfaite pour un réveillon au budget serré. Cette année, on oublie le foie gras qui atteint des prix indécents, et on en profite pour découvrir d'autres plats. Je vous assure qu'avec cette soupe, le plaisir sera total. Et au moins, ça change un peu ! La préparation est vraiment très simple. L'idéal est de faire soi-même le bouillon de poisson. Pour cela, on peut utiliser les restes de poissons, une fois les filets levés. La tête, les arêtes mais aussi les épluchures de carottes, les feuilles du céleri, les tiges de l'aneth... sont autant de choses qui vont parfumer ce bouillon. Pour plus de facilité, il est aussi possible d'utiliser un bon court bouillon ou fumet du commerce. Le reste est tout simple. on commence par la cuisson des légumes les plus longs, puis on ajoute les pommes de terre, et enfin la crème et le saumon. Il ne reste plus qu'à servir et se régaler. Lohikeitto; Soupe Finlandaise crémeuse au saumon : Bouillon: Quelques restes de poissons Quelques légumes (épluchures des carottes, feuilles du céleri, oignon, tiges d'aneth...) Eau Sel Faire revenir les légumes dans un filet d'huile, puis ajouter les poissons en morceaux. Recouvrir généreusement d'eau. Saler et laisser cuire pendant environ 45 minutes, ou plus si vous voulez encore plus de goût. Filtrer. Lohikeitto: 1 petit oignon 1 gousse d'ail 3 carottes moyennes 1 branche de céleri 1 cs bombée de farine 800 g de bouillon de poisson (maison ou autre) 3 pommes de terre moyennes 350 g de saumon frais 200 g de crème liquide 1 bouquet d'aneth sel, poivre huile Faire revenir l'oignon finement émincé dans un peu d'huile. Ajouter l'ail râpé, puis les carottes en cubes et le céleri en morceaux. Faire revenir pendant quelques minutes en remuant. Ajouter la farine et bien mélanger. Ajouter le bouillon et assaisonner. Faire cuire pendant environ 10 minutes à petits bouillons. Ajouter les pommes de terre en cubes et faire cuire pendant 15 à 20 minutes. Vérifier la cuisson des pommes de terre. Elles doivent être cuites, mais se tenir. (A ce stade, on peut arrêter la cuisson pour la poursuivre au dernier moment. ) Ajouter la crème, le saumon en cubes et une belle quantité d'aneth hachée grossièrement. Vérifier l'assaisonnement et cuire pendant quelques minutes à feu moyen. Le saumon ne doit pas trop cuire. Servir aussitôt, avec de l'aneth, un filet de citron, quelques baies roses, et éventuellement un peu de saumon fumé sur le dessus. Vous pouvez accompagner de pain nordique beurré. Pour finir: cette soupe peut être servie en entrée pour Noël, mais fera aussi un délicieux repas pour cet hiver. A la place de la branche de céleri, il est possible d'utiliser un blanc de poireau. Le vert parfumera le bouillon.
