Desde que tuve éxito con mi masa madre, Joe, hice solo pan por un año. Un año experimentando con distintos mix de harina blanca e integral, distintos niveles de hidratación y procesos hasta que finalmente me sentí cómoda. Cuando ya sentía que conocí con confianza cómo manejar una masa madre y la lógica de las recetas ya me aventuré a hacer cosas distintas. Un pan fácil La focaccia es un pan fácil versus un pan de masa madre estilo pan de campo por varias razones. Primero que nada, no necesitas conseguir harina panadera o de fuerza porque usa harina común. Eso descomplica bastante las cosas porque sé que a veces, dependiendo de dónde vivas, puede ser difícil encontrar harina panadera. ¡Usa harina común para que tu focaccia con masa madre quede muy suave y esponjocita :)! La otra razón que lo hace fácil es que no le tienes que dar forma como con un pan circular, solo estirarla en la bandeja de horno. Además, se cocina el mismo día, nada de esperar al día siguiente, lo cual es conveniente. Y por últimoooo no necesita vapor al cocinarse, así que olvídate del agua, la olla y todo lo demás.
