Sono sempre stata una grande adoratrice di pizze, pane e focacce e la Focaccia di Recco è una delle mie preferite. Quella consistenza e quel sapore unico, il morbido e cremoso ripieno che riesce a trasformarlo in una vera e propria coccola. A mio parere è una di quelle ricette che ti risolleva lo spirito nei momenti "no". La sua preparazione è davvero molto semplice e, a differenza delle altre focacce, non necessita di lievitazione. Proprio per questo motivo è la ricetta perfetta per quando non si ha molto tempo a disposizione ma si vuole gustare un piatto unico sfizioso e saporito. La focaccia di Recco è una ricetta tradizionale ligure che tutti, almeno una volta nella vita, devono provare. Solitamente viene realizzata con un formaggio cremoso tipico simile alla crescenza o allo stracchino. La versione originale prevede una cottura ad alta temperatura (tra i 270°C e i 320°C). Tempi di cottura e di riposo sono sostanzialmente brevi pertanto non avete scusanti. L'unica accortezza deriva dalla stesura dell'impasto che deve essere molto elastico e sottilissimo, ma con questa ricetta andrete sul sicuro. Il trucco sta nell'essere delicati, non tirare troppo l'impasto o stenderlo con il matterello. Vi basterà farlo scivolare giù dalle mani e, grazie alla forza di gravità, si allargherà con facilità. Per capire al meglio la tecnica da adottare vi consiglio di guardare questo video. Un piccolo appunto per quanto riguarda la farina. Io, per comodità, ho utilizzato un mix di farina 00 e Manitoba. Voi potete utilizzare indistintamente quella che più gradite senza però andare a modificare la quantità totale che deve risultare sempre 250 g. Queste le quantità per 4 persone, utilizzando una classica teglia da forno. Ingredienti 150 g di farina 00 100 g di farina Manitoba 5 g di sale fino 125 ml di acqua a temperatura ambiente 25 g di olio extravergine di oliva + extra per la teglia e la superficie 250 g di stracchino o crescenza Preparazione In una ciotola unite i due tipi di farina, aggiungete il sale e mescolate bene. Formate una conca al centro e versate olio e acqua. Iniziate quindi a lavorare il composto a mano o con l'aiuto di una planetaria munita di gancio impastatore fino ad ottenere un impasto liscio, morbido, omogeneo e ben elastico. Pesatelo e dividetelo in due parti di identico peso. Avvolgetele nella pellicola per alimenti o copritele con un canovaccio. Dovranno riposare a temperatura ambiente per almeno 30 minuti. Per non compromettere la giusta consistenza dell'impasto non dovranno prendere aria. Trascorsa la fase di riposo ungete bene con olio evo una teglia delle dimensioni circa 35x25 cm. Prendete il primo panetto di impasto. Stendetelo leggermente con le mani o con l'aiuto di un mattarello. A questo punto allargate la pasta posizionando le mani sotto la sfoglia e, senza toccarla con le unghie per evitare che si rompa, cercate di stenderla il più possibile in un velo sottile e uniforme della dimensione della teglia. Adagiatela quindi sulla teglia ben oliata e distribuite sulla superficie la crescenza, o lo stracchino, a cucchiaiate. Non è necessario spalmarlo perché si distribuirà durante la cottura. Prendete il secondo panetto di impasto e stendetelo, come fatto per il precedente, in maniera sottile e uniforme. Adagiatelo quindi sulla base coperta dal formaggio in modo che ricopra interamente la superficie. Spennellate con poco olio e pizzicate la sfoglia superiore della focaccia per creare dei buchi. In questo modo la sfoglia non si gonfierà durante la cottura e, come da tradizione, il formaggio potrà fuoriuscire conferendo il sapore tipico della Focaccia di Recco. Ponete in forno statico preriscaldato a 250°C per circa 12 minuti posizionandola nella parte bassa del forno. Una volta sfornata lasciate raffreddare per pochi minuti, poi tagliatela e gustatela ancora calda.
