Ciao a tutti, oggi vi propongo un dolce che vi darà molte soddisfazioni in quanto è caratterizzato da un ingrediente poco usato in pasticceria ( le castagne) ...apparte il mont blanc, dove tra l'altro si utilizzano i marroni canditi e non la farina di castagne. Ricetta del maestro Di Carlo Ingredienti 1050 di burro morbido a 16/18°C 5 gr di sale fino 250 gr di zucchero semolato 300 gr di panna liquida 150 gr di zucchero invertito 1050 gr di tuorli 1000 gr di albume 750 gr di zucchero semolato 900 gr di farina di castagne bianche 50 gr di lievito in polvere Procedimento Iniziare a montare in planetaria con la frusta i primi 3 ingredienti, dopo qualche minuto aggiungete a filo la panna e lo zucchero invertito, poi i tuorli leggermente frustati in modo da renderli fluidi. A parte montare gli albumi con la seconda dose di zucchero a neve lucida, quindi inserire nella montata di burro alternando alle polveri setacciate mescolando con una spatola morbida. Dressare in stampi da 500 gr e volendo aggiungere 60 gr di marroni canditi in superficie. Cuocere a 160°C per 55 minuti. Note Ottimo per la colazione o la merenda, rimarrà con una struttura morbida e umida anche per 7 giorni ( debitamente coperto) . Provate, poi è anche adatto a chi non tollera il glutine.
