Comme juste la tête de mes enfants quand je vais arriver avec mes bols fumants et qu'ils vont me dire papaaaa ! on t'avait bien dit que c'était plus possible !!! Donc tout ça et plus encore m'a donné une énorme envie de me tremper la blette dans un petit bouillon et soba, tout un menu en quelque sorte ! Petit bouillon et soba et tempura de blettes rouges Ingrédients : 240g de nouilles soba - 60cl de bouillon de volaille (vous pouvez bien sûr utiliser à la place de ce bouillon un bouillon dashi, mais la simplicité et le bouillon de volaille ne nuisent pas !) – 2càs de mirin – 2càs de soja – 2 œufs – 180g de farine – 60g de Maïzena - 2 tiges de ciboule – du piment japonais Versez le mirin dans une casserole et portez-le à ébullition, ajoutez ensuite le bouillon et le soja et laissez sur feu moyen une dizaine de minutes. Faites cuire les nouilles soba dans de l’eau bouillante comme indiqué sur le paquet en écumant l'eau de temps en temps. Dès qu'elles sont cuites passez-les sous l'eau froide et égouttez-les rapidement puis réservez-les. Versez dans un saladier les jaunes d'œufs et 30cl d'eau. Ajoutez la farine et la Maïzena et mélangez rapidement, ne cherchez pas à réaliser un mélange lisse bien au contraire ! Faites chauffer l’huile dans une friteuse à 180 °. Coupez les feuilles de blettes bien lavées et séchées en deux dans la longueur. Trempez-les rapidement dans la pâte à tempura en les tenants par la queue. Faites les frire une par une, puis égouttez-les sur du papier absorbant. Faites bouillir de l’eau et trempez-y rapidement les nouilles soba cuites, égouttez-les rapidement et répartissez-les dans les bols. Hachez la ciboule et parsemez-la sur les nouilles. Répartissez le bouillon bien chaud par dessus. Déposez une demi-feuille de blette sur chaque bol et forcément si vous aimez du piment japonais sur tout ça, c'est bien bon ! Stock, soba noodles and red Swiss chard tempura Ingredients: 240g soba noodles - 60cl chicken stock (of course, you can use dashi here as well) - 2 Tbsp mirin - 2 Tbsp soy sauce - 2 eggs - 180g flour - 60g cornstarch - 2 scallions - Japanese chili Pou the mirin in a saucepan and bring to the boil. Then, add in the chicken stock and soy sauce and leave on medium heat for about 10 minutes. Cook the soba noodles following the instructions on the packet skimming the water now and then. Once done, rinse them in cold water. Quickly drain and set aside. In a large bowl, put the egg yolks and 30cl water. Add the flour and cornstarch and quickly mix. Do not look for a smooth batter, quite the opposite! Heat up frying oil in a deep fryer to 180°C/350°F. Wash and dry the Swiss chard. Halve lengthwise. Quickly dip them in the tempura batter, holding the stem. Fry one by one and set aside on paper towel. Bring water to the boil and quickly put the cooked soba noodles. Quickly drain again and serve in bowls. Chop the scallions and sprinkle the noodles with them. Pour the stock over the noodles. Place half chard on each bowl and add some Japanese chilli if you like.
