Ik was al een tijdje op zoek naar een recept voor mosterdsoep zonder al te veel poespas tot ik dit recept tegenkwam. Ik had eerst een beetje mijn twijfels over de ruime hoeveelheid prei en aardappel maar ik heb me toch zo goed mogelijk aan het recept gehouden, gelukkig maar want hij was heerlijk! Ik denk dat ik niet verder hoef te zoeken, ik heb mijn recept voor mosterdsoep gevonden :) Wat heb je nodig? Voor 4 personen: - 3 preien - 3 aardappelen - 3 eetlepels grove mosterd - 750 ml. bouillon (kip of groente) - 200 ml. slagroom - 2 eetlepels bieslook (of lenteui) - peper & zout Omdat er alleen maar hele dikke preien waren gebruikte ik er 2 samen met 2 grote aardappelen ;) Hoe maak je het? Snij de preien in ringen en de aardappelen in blokjes. Verhit wat boter in de soeppan en bak hierin de prei 5-6 minuten op zacht vuur. Voeg de aardappelen en 2 eetlepels mosterd toe en bak dit even mee. Schenk de bouillon erbij, breng de soep aan de kook en laat 20 minuten op zacht vuur koken. Pureer de soep met een staafmixer en zet terug op het vuur. Voeg de slagroom toe en nog 1 eetlepel mosterd. Roer dit goed door en breng de soep op smaak met peper & zout. Strooi als laatste de bieslook over de soep en serveer evt. met uitgebakken spekreepjes of, zoals ik heb gedaan, uitgebakken rauwe ham.
