This is a reworking of my grandmother's Barbados creams: we're going the way of the coconut and the banana. It's scarcely a fancy pudding, but sometimes it can be sweetly comforting to have something a little homespun, and almost from the nursery. This is not far from that old favourite, bananas mashed with cream and brown sugar. Hard to beat, to be sure, but the coconut yoghurt and rum certainly add a little something. Bereiden: Maak het soezenbeslag: Breng de boter samen met de melk en het water aan de kook in een steelpannetje op het vuur. Voeg vervolgens de bloem, een snuifje suiker en een snuifje zout toe. Roer droog met een spatel tot een stevig deegje. Meng vervolgens beetje bij beetje de eieren er onder. Doe het beslag in een spuitzak. Maak de tijgerprint: Doe de zachte boter samen met de suiker en de bloem in de keukenrobot. Gebruik de deeghaak en meng tot een homogene massa. Kneed eventueel nog extra met de hand. Pak het deegje in in een laagje plasticfolie en laat rusten in de koelkast. Maak de puddingcrème: Breng de melk samen met het merg van de vanillestokjes en de suiker aan de kook. Meng in een andere kom de roompoeder, de blonde cassonadesuiker, de room en de eidooiers. Voeg een scheutje van de kokende melk bij het mengsel van eidooiers. Roer los en giet het eidooiermengsel nu bij de rest van de kokende melk. Roer tot een dikke pudding en haal het pannetje van het vuur. Meng er tot slot nog de witte chocolade, de geweekte gelatine en de boter onder. Bak af: Neem een met bakpapier beklede bakplaat. Spuit verschillende kleine cirkeltjes op de bakplaat. Haal het tijgerdeegje uit de koelkast en rol het dun uit. Steek met een dresseerring rondjes uit het deeg en leg deze bovenop de rondjes soezenbeslag. Verwarm de oven voor op 250 graden. Zet de oven vervolgens af en laat er de soezen 10 minuten zo in staan. Zet de oven vervolgens op 160 graden en laat de soezen nog 10 minuten nadrogen. Haal de soezen uit de oven en snijd ze open. Vul op met de puddingcrème en werk optioneel af met extra eetbare versieringen.
