To make our edible spheres, we rely on the power of gelatin, which also gives desserts, such as Jell-O and panna cotta, their solid, slightly jiggly textures. When gelatin is hot, it’s a liquid, and when it’s cold, it’s a solid. We start by dissolving powdered gelatin into a hot liquid, such as fruit juice. Then, we drip the warm gelatin mixture into a container of cold oil to instantly create tiny, solid spheres. To help kids understand these key temperature-related changes, have them stir together an additional 1 teaspoon gelatin and ¼ cup cold water. What does the mixture look like? How does it compare to the mixture in step 4 of this recipe? Mixing gelatin with a cold liquid leaves you with a chunky, undissolved mixture that won’t be able to form smooth spheres.
