This Pohorje Omelette (Slovenian Sweet Omelet) recipe from Alma Rekić, makes a fluffy, sweet, cake-like omelet filled with cranberry jam, whipped mascarpone and berries.
Semla (or Semlor in plural) is a Swedish traditional sweet treat, a flour bun filled with almond paste and topped with whipped cream and powdered sugar. Semlor were traditionally eaten before taking on the fasting before Lent. However, these days, it is very normal to accompany your coffee with this treat anytime from New Year´s Eve to Easter. Semlor are everywhere at the moment - in the front at cafés & bakery displays, at reserved attention spots in supermarkets, as well as in TV and adverts all around the country. Swedes are very sensitive about their semlor, there is even a blog called Semmelmannen, written by an anonymous man, who tries semlor at different cafés and konditorei and evaluates them on a scale from 1-10. If you´re going to Sweden anytime soon, I definitely suggest trying them them in a café, or, you can make them at home! Here´s the recipe: Švédska Semla (alebo Semlor v množnom čísle) je tradičná sladkosť, múčne kysnuté cesto naplnené mandlovou pastou so šľahačkou navrchu a posypané cukrom. Semlor sa tradične jedávali iba tesne pred veľkonočným pôstom, ale v dnešnej dobe už ich môžete nájsť v kaviarňach, cukrárňach a pekárňach od Nového roku po Veľkú Noc. Jedia sa kedykoľvek, počas fika ku káve. Švédi sú na svoje Semlor veľmi citliví, dôkazom je aj blog Semmelmannen, ktorý vytvoril jeden anonymný pán, ktorý si denne dá svoju Semlu na inom mieste a neskôr ju ohodnotí na škále od 1 po 10. Ak sa chystáte v najbližšej dobe do Švédska, určite jednu skúste, alebo si ich pripravte doma, tu je recept, z ktorého vám vyjde asi osem stredne veľkých Semlor. Ingredients for 8 medium-sized Semlor: 50g butter 150ml semi skimmed milk, 25g fresh yeast 1 tsp crushed cardamom (can be replaced with the grated peel of 1 orange) good pinch of salt 40g sugar about 250-300 g plain flour 1 beaten egg for brushing Filling: 100g almond paste or marzipan 50 ml semi skimmed milk whipping cream, icing sugar ... Nachystajte si: 50g masla 150ml polotučného mlieka 25g čerstvých kvasníc 1 lyžička kazdamónu ( môže sa nahradiť kôrou z jedného pomaranča) štipka soli 40g kryštálového cukru 250-300g hladkej múky 00 1 vajíčko na potretie Plnka: 100 mandľovej pasty alebo marcipánu 50ml polotučného mlieka šľahačka a práškový cukor na posypanie How to? Make your dough: melt the butter and add the milk. The temperature of this mixture should be around 37 Celsius degrees. Crumle the yeast in a mixing bowl, crush your cardamon and add it to the yeast. Postup Urobte si cesto: roztopte si maslo a pridajte doňho mlieko, zmes by mala mať asi 37 stupňov Celzia. Do veľkej misy si rozdrobte kvasnice, rozdrvte si kardamón a nasypte na kvasnice. Pour the milky mixture over the yeast and stir, using baloon whisk until it melts. Then and the sugar and salt, and gradually start incorporating the flour. Switch to working the dough with your hand as the mixture gets stiffer. Leave a bit of the flour for later. Na kvasnice nalejte mlieko a miešajte, kým sa neroztopia. Potom pridajte soľ a cukor a postupne aj múku. Trošku múky si nechajte na posypanie dosky. Once well incorporated, cover the bowl with a towel and let it rise on a warm spot for about 40 minutes. Keď je cesto spracované, nechajte ho prikryté utierkou na teplom mieste zväčšovať objem asi 40 minút. Once the dough has risen, transfer it onto a floured surface, work it for a few minutes first and then shape 8 equal balls. Place them on a baking paper, leaving enough space between them, as they will rise further. Cover with the towel and let rise for another hour. Put your oven on 250 degrees. Keď cesto vykysne, premiestnite si ho na pomúčený povrch a spracujte postupne do ôsmych rovnakých guličiek. Tie dajte na plech na papier na pečenie, nechávajúc dostatočný priestor pre každú z nich, ešte sa budú zväčšovať. Zakryte ich utierkou a nechajte zase kysnúť asi hodinu. Takmer hotovo, už si len vyšľahajte šľahačku, dajte navrch mandľovej zmesi, prikryte viečkom a posypte práškovým cukrom. Dobrú chuť! It is hard to recommend a sofisticated way of eating Semlor, but do try it with your dessert cutlery. Its fun to just eat them with your hand, too. When you have some left over from the previous way, Swedes also eat them from a bowl of warm milk. Ťažko povedať, či sa Semlor dajú jesť sofistikovaným spôsobom, ale skúste to s dezertným príborom. Dá sa to aj bez príbora v metre (odskúšané). Ak by vám nejaké ostali na ďalší deň, Švédi by ich jedli z hlbokého taniera, zaliate teplým mliekom.
