These Guyanese butterflaps were written about and have been posted by Cynthia of Tastes Like Home. They are, in fact, nothing more than just bread and butter..yet it could find a way come to my mind and somehow played a trick to make me convinced that this simple and plain bread would be worth my time & (little) effort and pay off nicely! I didn't use Cynthia's recipe to make a dough but I instead chose one of my favorite and reliable recipes and simply followed a process of filling and shaping the flaps..as for the outcome, they are absolutely a perfect match..the bread and butter!! My husband was born in Paraguay and it almost seems that every street corner sells Empanadas. Even though the ones made in Canada are tasty, I will be the first to admit that the ones from Paraguay are outta this world! Maybe they taste better there because we are immersed in the culture and flavors of the land. The native Paraguayan people are such friendly people, and we were welcomed with such gracious hospitality. No matter how poor some of them are, what they have is yours and we were made to feel very welcomed. We haven't been there since 1986 but would love to take our family there someday. In the meantime my family gets to enjoy these. They don't get these very often but when I do make them they are devoured in no time at all. I make enough for the family to enjoy one day and a few extra to pack for lunches the next day. Depending on how big you want them will determine how many a recipe makes. I made a double batch yielding in 32 the size of my hand. The following recipe is one recipe. Dough: 4 cups flour 1 teaspoon salt 1 cup hot milk 3/4 cup melted lard or shortening. In a bowl combine the flour, salt with the hot milk and lard. Mix until well combined. Knead the dough just until all the flour is absorbed about 8- 10 times and holds together well. You do NOT want to overwork the dough. Divide the dough into 16 balls. On a lightly floured surface roll into circles. Fill with the filling and seal. *If you want to make more than one recipe I have found it is best to make the recipe one batch at time. Filling: I make the filling the day before so it has a chance to cool completely. 1 1/2 pounds of lean ground beef 2 onions, minced 2 cloves of garlic, crushed 1 green or red pepper (optional) I didn't have any this time 1 teaspoon of cumin salt, pepper, pepper flakes to taste. 3 hard boiled eggs, chopped 1/2 cup of fresh parsley, chopped Brown the ground beef with the onions and garlic in a bit of oil, then add the seasonings to taste. Cool the mixture before adding the cooked eggs and parsley. Fill and seal the empanadas. Heat the 3 inches of oil in a pot or deep skillet on medium high heat. Add empanadas a few at a time. You do not want to crowd the pan, turning only once until you reach a golden brown color. Drain on paper towels. Cool for several minutes before serving as they are very hot. Serve with hot sauce on the side. *Tip, If you find you have extra dough, fill the remaining empanadas with grated mozzarella to make cheese empanadas. Very good!

Ribeye Steak Tartare with Cured Egg Yolk , Fried Capers & Shallots ❤️👌🏻 Tips: Always use fresh beef, talk to the butcher about the fact that you are planning on serving it raw. Normally butchers cut the meat the same day they sell it. Place it in the freezer for 15-30 minutes before cutting it along with the knife. Make sure you use a very clean knife, board and HANDS when handling the raw beef. Cut the beef until the very end, right before serving and add some olive oil, salt and pepper to it. If you are using ribeye make sure you trim the excess fat (you can make chicharrones with it). Ingredients: •4 egg yolks (only need 2 for this). •1/4 cup soy sauce or tamari. •1 tbsp mirin •1 lb prime ribeye. •1/4 cup capers (divide in 2). •2 shallots (chop one and thinly slice the other). •4 anchovies (cut up into a paste with your knife). •3 tbsp parsley (chopped). •2 tbsp chopped chives (more for topping). •1/2 lemon. •1.5 tsp caper juice. •1 tsp worcestshire sauce. •1 tsp dijon mustard. •a few drops franks red hot or tabasco. •1/4 cup olive oil. •Potato chips. Directions: 1.- add the egg yolks to a container with 1/4 cup tamari or soy sauce and 1 tbsp mirin. Let them sit in the fridge for 4 hrs. 2.- place your ribeye in the freezer along with the board you’ll be cutting it in and knife. 3.- pat dry half of your capers as much as you can and you’ll fry them in some olive oil on medium heat until golden. You will do the same with the shallot you cut into super thin slices. 4.-combine the shallots, chives, half of the capers, lemon juice, dijon, 3 tbsp olive oil, anchovies, parsley, worcestshire and hot sauce. 4.- cut up your ribeye (remove excess fat) into small cubes, you can do as small as you like but I like tiem big enough to truly get a bite. Drizzle it with some olive oil, salt and pepper. 5.- Add the ribeye into the shallot herb mixture right before serving, serve it using a ring mold. I made 2 little towers with a yolk each, the fried capers and shallots. 6.- I like mine with potato chips.
