If you ask me the reason why I start baking or making some entremets, I just can't answer, haha. Because I have no reason, I just want to make it, that's all. Like this entremets, I think about making something for serving in my baking class ^^. I want to make something beautiful and yes, delicious. Berry, vanilla and chocolate have been used many time, but they are one of the best combination. This time, I make the base using chocolate biscuit (made with melted dark chocolate), then add Praline Feuilletine for interesting texture and flavour. Follow by the red berry mousse, jelly and vanilla mousse, the flavour that never betray me, haha. the top of the cake is whipped cream to make it more beautiful and become a canvas for decoration. Don't for get to remove it from the freezer to refrigerator at least 6 hours before serving, or it will be too hard to enjoy. I'm busy in the kitchen all the week, so don't have time to sit down and type this recipe (plus it's long, haha). Put dark chocolate and butter into a bowl, place the bowl over a bowl of hot water. Stir until melt, set aside. Whip egg whites, pinch of salt and sugar until firm peaks formed. Put egg yolks into chocolate bowl. Whisk to combine. Fold meringue into chocolate mixture in 3 additions. Sift the flour into the bowl. Fold to combine. Pour into prepared cake pan. Bake for 15 minutes. Remove from the oven, let it cool completely. Cut into 20x20 cm and place in the 20x20cm square cake ring (or cake pan with removable base). Sprinkle Creme de Cassis over the Biscuit. Make Praline Feuilletine: Melt milk chocolate and praline by put both of them in a bowl and place the bowl over a bowl of hot water, stir until fully melt. Mix in the Feuilletine. Spread Praline Feuilletine over the biscuit. Make Red berry mousse: Bloom the gelatine sheets in ice cold water for at least 5 minutes. Put both berry puree and lemon juice in a microwavable bowl, warm in the microwave until lightly boil. Remove the gelatine from the water, squeeze lightly, then put into the berry mixture, stir to combine. Let the mixture cool. Mean while make the Italian meringue follow the method here. Whip the whipping cream until soft peak formed. Fold 1/3 of whipped cream into the berry mixture. Pour the berry and whipped cream mixture back into the whipped cream bowl. Fold to combine. Fold 145g of Italian meringue into the berry mixture. Fold until smooth. Pour into the prepared ring. Freeze until firm. Make Jelly: Bloom the gelatine sheets in ice cold water for at least 5 minutes. Put both berry puree in a microwavable jug. Warm until almost boil, remove the gelatine from the water, squeeze lightly, then put into the berry mixture, stir to combine. Let the mixture cool, then pour over the red berry mousse. Freeze until firm. Make Vanilla mousse: Bloom the gelatine sheets in ice cold water for at least 5 minutes. Warm the milk until almost boil. Meanwhile whisk the egg, custard powder, seeds from vanilla bean, and sugar together in a small saucepan. When the milk become hot, slowly pour into the saucepan, whisk all the time. Then place the pan over low heat until boil, whisk all the time. Remove from the heat. Remove the gelatine from the water, squeeze lightly, then put into the saucepan, stir to combine. Pour the mixture into a bowl, and stir in the butter. Place plastic wrap directly over the custard. Let it cool to room temperature before using. Whip the whipping cream until soft peaks formed. Fold 1/3 of the whipped cream into the custard. Pour the custard and whipped cream mixture back into the whipped cream bowl. Fold to combine. Pour into the ring over the jelly. Freeze until firm. Whip the whipping cream (100g) until soft peaks formed, and spread over the vanilla mousse. Refrigerate until ready to serve (at least 6 hours) cut into pieces. Whip the whipping cream (170g) and icing sugar until firm peaks formed, and pipe over the entremets, decorate with fresh raspberry before serving. Harmonia: Red berry entremets

Piecrust for 1 9-inch pie 2 Tablespoons butter, melted 1/2 10 ounce package frozen chopped broccoli, thawed and drained 1/2 cup Swiss cheese, shredded 2 ounces minced ham 2 eggs 1/2 cup heavy or whipping cream 1/4 teaspoon salt Prepare piecrust. Roll out to 1/8 inch thick and cut with 2” round cookie cutter. Cut out 32 circles. Press each onto bottom and up side of 1 3/4 “ muffin tin. With pastry brush, brush melted butter over each. Preheat oven to 375 degrees. In small bowl with fork, stir broccoli, Swiss cheese and ham until mixed. Into each pastry cup spoon about a teaspoonful of the broccoli mixture. With whisk, beat eggs, cream and salt until blended. Spoon egg mixture over broccoli mixture in each pastry cup. Bake 25 minutes or until knife inserted in center comes out clean. Remove from pans. Makes 32. TO DO AHEAD: Up to 1 month ahead, prepare quiches as above: wrap in freezer wrap or bags. About 30 minutes before serving, preheat oven to 325 degrees. Place frozen quiches in jelly-roll pan. Une de mes amies a tellement craqué sur mon dernier entremets publié, Ronde Fruitée, qu'elle m'a presque supplié imploré de lui refaire pour elle à l'occasion de son anniversaire. Impossible de refuser. Elle n'avait qu'une demande: ne mettre que de l'abricot (exit la mangue et la pêche blanche), je n'en avais qu'une en échange, faire une déco totalement différente et me laisser le champs libre pour cela. Aucune objection de sa part, elle me fait 100% confiance 😊. Le gâteau n'étant que pour elle et son compagnon, et me connaissant, elle m'a même autorisé à faire une jolie photo de découpe avant de lui donner; j'étais aux anges 😄 Pour cette fois-ci, je voulais un flocage pour récréer l'effet velours de la peau de l'abricot et surtout une déco ultra minimaliste mais qui ne laisse aucune ambiguïté sur le contenu du gâteau. Finalement, je dois reconnaître que je préfère largement cette 2è version, uniquement du point de vue visuel, puisque je ne l'ai pas goûté, mon amie elle, m'a avoué en avoir mangé presque plus de la moitié en une seule soirée tant elle l'avait apprécié 😱!!! Moule Universo Silikomart Ø 18 - h 5 cm soit pour +/- 8 personnes A RÉALISER 48 HEURES AVANT LE JOUR DE LA DÉGUSTATION Coulis abricots rôtis au miel de lavande et thym citron 1 kg d'abricots (poids dénoyautés) 60 g de miel de lavande 6 vielles gousses de vanille (facultatif) QS thym citron frais *** Préchauffer le four à 180° Placer les abricots bien à plat dans un grand plat, recouvrir de miel. Ajouter les gousses de vanille et le thym citron en branches. Laisser rôtir 20 à 30 min, les fruits doivent être parfaitement tendres. Retirer du four et laisser entièrement refroidir. Retirer la vanille et les branches de thym. Retirer la peau des abricots (normalement, une fois cuits, leur peau se retirer très facilement). Verser le tout (jus compris) dans un bol mixeur, ajouter quelques feuilles de thym citron frais et mixer jusqu'à obtention d'une purée très fine. Réserver. Biscuit Madeleine au Miel de Lavande (Ø 14) 30 g de sucre glace 15 g de farine type 45 15 g de poudre d'amande 30 g de beurre 1/2 sel 10 g de miel de lavande 20 g de blancs d'oeufs (1/2 blanc d'oeuf) * 1 c à s de confiture abricot très peu sucrée *** Préchauffer le four à 180° Fondre le beurre sur feu doux jusqu'à ce qu'il obtienne un jolie couleur "noisette". Ajouter le miel et laisser chauffer de nouveau 2 à 3 min. Retirer du feu et laisser tiédir. Dans un saladier, mélanger la farine, le sucre glace et la poudre d'amande. Creuser un puits. Incorporer le blanc d'oeuf et le mélange beurre/miel fondu et tiédi. Mélanger délicatement jusqu'à obtention d'un appareil parfaitement homogène. Couler dans un cercle à tarte préalablement graissé de 14 cm. Cuire +/- 15 min (coloration dorée foncée) Laisser tiédir quelques minutes et retirer délicatement le cercle. Réserver sur une grille pour laisser l'humidité s'évacuer. Chemiser un cercle à entremets de 14 cm de Ø et de haut d'une bande de rhodoïd. Déposer le biscuit madeleine (le dessus dessous) et napper la surface d'une pellicule de confiture abricot. Réserver au congélateur. Compotée abricots (Ø 14) 250 g de coulis précédemment réalisé 5 g de pectine NH (à défaut, 3,5 g de gélatine) *** Tiédir le coulis à 40° Incorporer la pectine dans une petite quantité de coulis tiédi (+/- 2 c à s). Mélanger bien en faisant attention à ce qu'il n'y ait aucun grumeaux. Incorporer au restant de coulis. Mixer et porter à ébullition 1 min. Mixer de nouveau et verser sur le biscuit madeleine. Réserver au congélateur. Panna Cotta Vanille et Chocolat blanc (Ø 14) 65 g de chocolat blanc de couverture (à au moins 30%) 100 g de crème liquide entière 70 g de lait les graines d'1 gousse de vanille bien grasse et charnue 1 g de gélatine (1/2 feuille) *** Mettre à ramollir la gélatine dans une grande quantité d'eau froide. Dans une casserole, verser la crème, le lait, les graines de vanille. Faire chauffer sur feu doux. Une fois le mélange porté à ébullition, retirer du feu, couvrir et laisser tiédir 15 min. Ajouter la gélatine ramollie et essorée et remuer bien à fond à l'aide d'un fouet pour bien la dissoudre. Incorporer le chocolat blanc et laisser fondre doucement. Remuer pour obtenir une préparation parfaitement lisse et homogène. Mixer au mixeur plongeant et laisser tiédir avant de verser sur la compotée abricot/mangue/pêche blanche. Réserver le tout au congélateur au moins 5 heures. Mousse abricots (SOURCE: Pastry by Chris) 250 de coulis précédemment réalisé 7 g de gélatine (3 feuilles et 1/2) 125 g de chocolat blanc de couverture (à au moins 30%) 225 g de crème liquide entière très froide (si possible à 35%) *** Ramollir la gélatine dans une grande quantité d'eau froide. Tiédir la moitié du coulis à 40°. Ajouter la gélatine ramollie et essorée, mélanger bien pour parfaitement la dissoudre et si besoin chauffer de nouveau quelques secondes. Fondre la chocolat au bain-marie. L'ajouter au coulis gélifié, mélanger. Incorporer la moitié restante de coulis. Mixez. Laisser tiédir. Fouetter la crème jusqu'à consistance semi-liquide et l'ajouter délicatement. MONTAGE (à l'envers) Verser la mousse dans le moule Universo (jusqu'à 2 cm du bord). Placer au congélateur 5/10 min puis ajouter bien au centre le montage biscuit madeleine/compotée/panna cotta (biscuit apparent et panna contre la mousse). Enfoncer légèrement pour faire remonter la mousse le long des parois. Réserver au congélateur 12/15 heures. Une fois l'entremets parfaitement congelé, le démouler délicatement et le floquer bien régulièrement. Flocage 140 g de couverture blanche 60 g de beurre de cacao 1 grosse pointe de couteau de colorant jaune liposoluble 1 grosse pointe de couteau de colorant orange liposoluble 1 petite pointe de couteau de colorant rose liposoluble *** Fondre 20 g de beurre de cacao au micro-ondes. Ajouter les colorants, remuer bien pour parfaitement les dissoudre. Filtrer à travers un tamis pour obtenir un mélange parfaitement fluide. Fondre ensemble la couverture blanche et le restant de beurre de cacao et le beurre de cacao coloré au bain-marie (la t° ne doit pas dépasser 40°), remuer pour obtenir un mélange parfaitement fluide et verser dans le pistolet à peinture à travers un tamis. "Pistoler" bien régulièrement sur l'entremets CONGELE. Réserver l'ensemble au réfrigérateur jusqu'à complète décongélation. Sortir à t° ambiante +/- 15 min avant dégustation.
