El Farton o Fartó en valenciano es un bollo que se elabora principalmente para acompañar a la famosa horchata valencia, bebida veraniega que os presenté la semana pasada como receta casera. La casa Polo fue quien en los años 60 lo popularizó y empezó a comercializarlo, además en los años 90 hicieron una versión hojaldrada, pero vamos la clásica receta es de bollería fermentada y con aceite girasol en vez de mantequilla o aceite de oliva. Fartons caseros Ingredientes 500 gr. harina de fuerza 75 gr. azúcar 100 ml. aceite girasol 100 ml. agua 40 gr. levadura fresca 2 huevos 1 pizca de sal Para la cobertura 75 ml. agua 100 gr. azúcar Azúcar glass Elaboración Batimos los huevos con el azúcar y el aceite de girasol, bien mezclado; después se incorpora el agua templada con la levadura ya disuelta, seguimos batiendo. Se incorpora la harina y ya con las manos se trabaja al menos unos 7-10 minutos para conseguir una textura elástica. Dejamos reposar 40 minutos bajo un paño tapado, pasado ese tiempo se extrae el aire y se toman porciones de unos 70 gramos, en mi caso los quería gorditos, si los queréis más crujientes basta con hacer los fartons de menos peso. Con cuidado se les da la forma, este paso fue más complicado de lo que yo creía, pero no fue imposible. Los volvemos a tapar y que reposen otros 40 minutos. Ahora con el horno precalentado los tenemos unos 10 minutos con calor arriba y abajo a 180ºC, se tienen que dorar un poco. Mientras hacemos el almíbar, en un cazo ponemos el azúcar y el agua, sin remover, que cueza unos 5 minutos, no queremos que espese en exceso. Cuando los fartons ya han salido del horno con la ayuda de una brocha untamos el almíbar y espolvoreamos el azúcar glass que se necesite para cubrirlos. Dejar enfriar y listos para degustar, toda una delicia, no sólo con horchata, con un cacao fresquito yo tampoco me resistiría.

Un brioche clásico, una masa enriquecida típica de la repostería francesa, lleva un alto porcentaje de huevos y mantequilla, y no necesita ni agua ni leche para hidratar la masa. No lleva ningún ingrediente secreto :P La receta de este brioche tradicional francés es del chef francés Laine Olivier, y la tomé de su cuenta en Instagram...al leer sus ingredientes me gustó muchísimo, por la razón que mencioné antes, es una versión clásica, más similar a versiones descritas en libros antiguos, con solo huevos para hidratar la masa, y por supuesto mucha mantequilla, un cuarenta por ciento de mantequilla. Desde hace mucho quería tener una receta de brioche clásica en mi blog. Vamos a encontrar muchos brioches o mal llamado brioches, con muchos ingredientes adicionales, nata, leche condensada, leche, yogurt, etc... pero los auténticos no llevan leche ni agua, solo llevan mucho huevo y mantequilla. Para este receta se utiliza harina T45 francesa. Afortunadamente, encontré esta harina en la tienda de repostería cerca de casa. La harina tiene 12,5% de proteínas. También hice otra prueba con harina de fuerza con 13, 7 % mezclada con harina todo uso de 10% y salió bien. Para un mejor resultado, la mantequilla debe estar blanda, pero no demasiado suave, que se pueda cortar en trocitos. Una vez incorporada, preferiblemente no amasar demasiado o tratar de que no aumente la temperatura de la masa. La temperatura ideal final es 25-26 C. A veces en verano, utilizo todo frío, el tazón, los huevos incluso la harina para que con el roce de la amasadora no se eleve tanto la temperatura de la masa. A veces, incluso coloco otro bol más grande con hielo, por debajo del tazón de la amasadora, para que la masa no se caliente ^_^. (Si la temperatura aumenta mucho, el resultado final no será óptimo) Con esta masa clásica de brioche, he hecho estos tipo Nanterre, que siempre quedan muy bonitos, y se hacen colocando filas de bolitas de masa dentro del molde. Las cantidades de masa para cada molde dependerá de su tamaño. También pueden hacer brioche a tete individuales, una trenza, un pan de molde sencillo, o también bollos individuales. Con la mitad de la receta a continuación, he hecho dos brioches tipo Nanterre, uno pequeñito y otro mediano. También pueden hacer uno grande o como prefieran. Espero que les guste!! Feliz día!! Ingredientes: 500 gr. Harina tipo 45 (12,5% de proteínas) 20 gr. levadura fresca (o 7 gramos de levadura seca instantánea) 12 gr. de sal fina 75 gr. Azúcar 300 gr. Huevos 200 gr. Mantequilla Para pincelar el brioche: 1 huevo ligeramente batido Para decorar: Azúcar perlada ———— Elaboración: 1. En el tazón de la batidora con gancho, agregar harina, levadura (si es fresca, desmenuzarla muy bien), sal, azúcar y huevos. Amasar a primera velocidad durante 1 minuto. 2. Amasar a segunda velocidad hasta que la masa se separe por completo de las paredes del tazón de la amasadora. 3. Agregue la mantequilla y amase hasta que la mantequilla esté completamente incorporada. La masa va a quedar un poco pegajosa, colóquela sobre la mesa con un poquito de harina, déjela reposar unos minutos, y forme una bola. 4. Colocar la masa en un recipiente, y cubrir a piel para que no se reseque con plástico de cocina. Reposar 1 hora a temperatura ambiente y luego, llevar al refrigerador toda una noche. 5. Al día siguieente, dividir y formar. Con la masa fría será mucho más fácil darle la forma deseada. Para hacer un brioche tipo Nanterre: Dividir en bolitas del mismo tamaño, y colocarlas en un molde cubierto con papel de horno o sulfurizado. 6. Dejar fermentar en un lugar cálido y húmedo a 28 °C. 7. Precalentar el horno a 170 °C. 8. Cuando el brioche alcance más de 3/4 del molde (tardará un par de horas aproximadamente, dependerá de la temperatura ambiente), pincelar con huevo batido, espolvorear con azúcar perlada y hornear durante 20-30 minutos aprox. o hasta que tenga un bonito color dorado. (La temperatura variará dependiendo del tamaño de los brioche que elabore). 9. Al sacar del horno, desmoldar de inmediato y dejar reposar hasta que enfríe totalmente.

Feel free to add any flavour other than vanilla - lemon or orange zest, coconut, etc. Ingredients For the cake 3 eggs 1/2 cup sugar 1 pinch of salt 115 ml milk 115 ml vegetable oil 1 cup fine semolina 1 cup flour 1 pouch of baking powder (14 g) 1 tsp vanilla extract butter to grease the baking pan shredded coconut to garnish For the syrup 3 cups sugar 3.5 cups water juice of 1/2 lemon Method 1. Prepare the syrup first. Add in a saucepan the sugar, water and lemon juice. Boil for about 5-10 minutes over medium heat until the sugar has dissolved and the syrup has slightly thickened. Remove the pan from the stove and set aside to cool down to the room temperature. 2. Make the cake. Preheat the oven to 185 degrees. Grease a preferably square or rectangular baking pan with butter and dust it with a little flour all around. In a large mixing bowl, beat the eggs and sugar first with a pinch of salt to a fluffy and foamy light yellow cream. Use a hand blender and mix well for 5-6 minutes. Add in the milk , oil and the vanilla extract and mix for another 1 minute. Mix the flour, semolina and baking powder together in a medium bowl. Stir in the flour mixture and mix until you get a smooth batter. Do not over-mix. Pour the batter into the baking pan and bake for about 25 minutes at 180-185 degrees until the top gets golden brown or a toothpick inserted in the center comes out clean. 3. Soak the cake in the syrup. Once you remove the pan from the oven, drizzle the cool syrup all over the cake slowly using a large spoon slowly and let it soak in. When you've used up all the syrup, cover the cake with foil and let it cool down to the room temperature. Garnish with shredded coconut, ground pistachio, walnuts, or almonds before serving.
