Frosting them with herbal cream cheese was also an amazing idea, they looked really elegant & tempting! I really recommend those muffins for breakfast of brunch ! Ingredients: (12) 2 cups of Flour (300 gm) 1 Teaspoon Baking powder 1 Cup Milk 1/2 cup Oil 2 Eggs 2 Teaspoons sugar 1 Teaspoon Salt 250 gm Frozen Spinach 100 gm Feta cheese For the Frosting: 200 gm Herbal cream cheese 4 Tablespoons Milk Preparation: Preheat your over to 180°C Prepare your Muffin tin by placing 12 cupcake liners. Leave Spinach to thaw and place it in a sieve and press very well with your fingers to drain any remaining water. Cut Feta into small cubes. In a mixing bowl, add All ingredients (without Spinach and Feta) and mix well with an electrical mixer till smooth. Add the Spinach and Feta then mix with a spoon. divide the batter into the 12 muffin liners and enter the oven for around 20-25 minutes. For the Frosting: Mix cream cheese with milk very well till smooth. Add in a piping bag with a star tip. Pipe some stars over your muffins & decorate with Parsley.
