bereiden:Verwarm de oven voor op 220°C. Snijd 1 ui doormidden en leg deze samen met de tomaten, bleekselderij en knoflooktenen in een braadslee. Besprenkel de groenten met de balsamico azijn en 2 el olijfolie en schud even door elkaar. Rooster de groenten in het midden van de oven in ca. 20 min. beetgaar en laat ze gedeeltelijk afkoelen. Snijd de 2 andere uien in dunne ringen. Verhit 2 el olijfolie in een grote soeppan en fruit hierin de uien en rozemarijn. Voeg de groentebouillon en tomatenpuree toe en breng aan de kook. Ontdoe de geroosterde knoflook en tomaten van hun velletjes en vang het sap dat vrijkomt op. Pureer de tomaten, het sap, de knoflook, uien en bleekselderij tot een glad mengsel. Roer dit door de soep. Breng de soep opnieuw aan de kook.Voeg de wortel, courgette, bloemkool en doperwten toe en laat de soep ca. 10 min. zachtjes koken. Spoel de witte bonen af onder koud stromend water. Schep de bonen, kerstomaatjes en 2 el peterselie door de soep, breng het op smaak met zout en peper en laat de soep door en door warm worden. serveren:Serveer de soep met fijngesneden basilicum, de rest van de peterselie en bestrooi met Parmezaanse kaas.
