Traditional rugelach cookies filled with jam
This is for those times you urgently need a brownie, but don't want to make — or, rather, can't justify making — a whole batch. This recipe makes two (four if needs be) fudgy brownies to be snaffled straight from the tin. And they can be turned into glorious sundaes: squodge into glasses with ice cream, pour a little maple syrup over and sprinkle with chopped walnuts. It is worth keeping takeaway-style foil tins in the house just to make these. Take my word for it, it will be a frequent occurrence. Cake baked in a pie shell! Sauce that goes on at the top and ends up in a layer right at the very bottom of the cake! That’s Funny Cake . . . a Pennsylvania Dutch treat so unusual, so intriguing, everyone who tastes it wants the recipe.

This baked yogurt cheesecake is made with rich ingredients, but the lack of a base means it’s actually a lot lighter than many other recipes. Gill Meller uses his own seville orange and fennel seed marmalade, but you could of course use any good-quality bitter marmalade you like.

Although I make the most of the Seville orange season (December to February), that bitter orange taste is too good to forsake during the long months that Seville oranges are not about. Then I simply try to recreate their floral sharpness by using regular orange and lime juices in something approximating a 2:1 ratio. If you want to do the same, then use 60ml / ¼ cup lime juice (from 2-3 limes) and 140ml / ½ cup plus 1 tablespoon orange juice (from 1 large or 2 medium oranges). I have to say, that when Seville oranges are in season, this tart looks like a disc of winter sunshine on the plate — and tastes like it, too. I must also add that the curd is just as fabulous spread over toasted crumpets or proper white bread. For US cup measures, use the toggle at the top of the ingredients list.

Apple Pudding Cake - creamy, moist and delicious autumn dessert
These are a very English kind of macaroon, the sort you always used to see displayed in bakers' shops alongside the madelines (those sponge castles dipped in luminous strawberry jam and dredged in throat-catching desiccated coconut, and so very different from those that inflamed the memory of Marcel Proust). The difference with coconut macaroons is that you need neither to be ironic nor self-consciously retro-cool to enjoy them. One bit of retail bossiness here: buy shredded, not desiccated, coconut, otherwise the sugary, fragrant dampness — which is, after all, the whole point — will be lost. This is one of those cakes that you make pretending it’s for the children. And of course they love it — and I have had more messages from people telling me that they’ve been under strict instructions to make this cake every single year for a child’s birthday more than just about any other cake — but it is no less enjoyed than by any adults hovering by the table, ready to snatch a slice. The maltiness is not overpowering, but subtly present (I always use the original Horlicks and not, categorically not, the one labelled ‘light” and the Maltesers — or Malt Balls if you are Stateside — make for a beautiful if ramshackle crown. And, by the way, the 15g (1 tablespoon) butter in the list of ingredients for the cake part is not a misprint! For US cup measures, use the toggle at the top of the ingredients list.
Kiksekage is an old classic non-bake cake very popular in the 70's and 80's in Denmark. But it's not a Danish cake. It's actually a German cake called "Kalte Hund" or cold dog, and the British has a similar cake, the chocolate fridge cake.
