Hello Again! I haven't been able to write a blog for the past week, because I have been visiting my handsome newborn nephew!! He is so much fun! And such a calm baby! I love him to pieces! Before I flew out I made some treats for my fiance, Tyler, to enjoy while I was gone! And one of the things I made was CARMEL ROLLS!! I got this recipe from my mom (She's been making them for YEARS)! And they are to die for!! So here is her delicious recipe! Once the dough is done in the breadmaker it should look something like this Here is the Carmel Sauce! yummm...1 Stick of butter, 2 C. Brown Sugar, 2 C Cream. Heat on Medium heat until boiling, then remove from heat and let cool. Roll out your dough and spread butter over Sprinkle cinnamon and sugar over the butter and roll up the dough Using a piece of thread cut the dough into 12 sections and place into Carmel Sauce in baking dish. Once in carmel sauce, cover with a towel and let rise for 15-20 min Then place in the oven for 25-30 at 350degrees. Or until tops are brown! Serve warm! Or heat up in the microwave for 20 seconds before serving! Dough: *2 Tablespoons Sugar *1 Teaspoon Salt *2 3/4 C. Bread Flour *2 Teaspoons Active Dry Yeast *1/4 C. Watert *1 Egg *7/8 C. Milk (Almost 1 C.) *1/4 C. butter Measure all ingredients into breadmaker. Choose the "Dough" setting. Once done, Roll out dough into a rectangle shape. Brush about 2-3 Tablespoons of butter over the dough and sprinkle with Cinnamon Sugar. Roll dough up. Using a thread cut the dough into 12 equal pieces. Carmel Sauce: *1 Stick butter *2 C. Cream *2 C. Brown Sugar Add all ingredients into saucepan. Turn to medium heat and bring to boil. Once boiling remove from heat and let cool. Place carmel sauce in baking dish. And place cut up dough pieces in carmel sauce. Cover with a towel and let rise for 20 min. Preheat oven to 350 degrees. Bake rolls for 25-30 min...or until tops are nice and brown.

I made this entire dough recipe and used half for caramel rolls and half for orange rolls. It made a lot of each. I made minis so if you are making full size rolls it's going to make less. I shared with 5 other families. It made that many mini rolls. Dough- (this is the fairy roll recipe from earlier on the blog) 2 cups boiling water 2 cubes (1 cup) margarine (DON'T USE BUTTER - you may never hear me say that again, but in this recipe it changes everything. Trust me - I found out the hard way) 3/4 cup sugar 2 T. yeast 3 eggs, slightly beaten 6-7 cups flour 1 t. baking powder 1 t. salt Filling- (You'll have to double this if you make the entire dough recipe into caramel rolls) 1 1/2 cups brown sugar 1 1/2 cups butter 1/3 c karo syrup 12-14 oz sweetened condensed milk 1 cup brown sugar (to sprinkle over dough before rolling) Pour boiling water over margarine (You used margarine, right? If not, you'll be sorry.) Stir the sugar into this mixture and then let it cool until just warm. Then add the yeast and beaten eggs. Mix together the dry ingredients. Add these to the wet mixture and stir, stir, stir. Then get your husband to stir when your arm feels like falling off. (Or put it all in your kitchenaid mixer!) Cut the dough into two balls. Throw a towel over the dough and let the dough rise until double. In the meantime place brown sugar (1 1/2 cups), butter and karo in a medium sauce pan. Stir until all is melted well combined. Stir in sweetened condensed milk and pour mixture into two greased 9x13 pans. Roll dough out into two large rectangles. Cut each rectangle in half lengthwise (for minis. If you want full size rolls do not do this.) Sprinkle with brown sugar. Roll up and cut into spirals. Place spirals on top the the caramel mixture and bake at 375* 20-22 minutes. Irresistibly soft and fluffy overnight caramel rolls, soaked in luscious butterscotch sauce. The best way to start the weekend!
This is a slight variation of the Christmas morning rolls we enjoyed as kids. My mom called them 'disappearing rolls', because they are so good, they disappear! Many call something like this monkey bread, but I just call it crazy good! What you need: 2 loaves of frozen bread dough 10 T. butter, melted 3/4 c. packed brown sugar 1/4 c. honey 1/2 tsp sea salt 1 pkg cook and serve butterscotch pudding (don't make the rookie mistake of trying to substitute instant pudding) 2 T. milk Pull 2 loaves of bread dough out of the freezer. Allow to sit at room temperature for one hour before cutting into chunks. In a microwave safe bowl, place butter, honey, sea salt and brown sugar. Pop in microwave for 45 seconds. Stir and continue to heat in 30 second intervals until all ingredients are melted and smooth. This step can also be done in a saucepan...I just find that I am doing this late at night, for the next morning, and need to speed the process up. Bread dough cut into chunks and placed in a buttered 9x13 pan. Allow butter/sugar mixture to cool out of microwave, then add 1 package of cook & serve butterscotch pudding and 2 tablespoons milk. Stir until smooth. This is what the sauce should look like. Dare you not to take a dip with your finger. Seriously, dare you! Pour the sauce over the bread dough, cover and place in the refrigerator over night. Obviously the dough is not going to proof in the refrigerator, over night...so unless you set your alarm for 3am to pull them out to proof on the counter follow my simple cheater trick for quick proofing these ridiculous rolls: pull them out of the refrigerator and pop in a preheated oven at 170 degrees. They will proof in no time (30-45 minutes...depending on your altitude) This is what they look like at 6000 feet (i.e. my home) after 45 minutes at 170 degrees. All ready for the real heat. I just switch it up to 350 degrees, not worrying that the rolls sit in the oven while the temperature rises. After 20 minutes of baking at 350 degrees, I noticed the tops were browning, quicker than I wanted, so I reused the piece of aluminum foil that I covered them with in the refrigerator overnight and popped on top, so they could keep baking, but not keep browning. They cooked for 10 more minutes and were perfection! After 30 minutes bake time. Run and knife or spatula around the edges of the plan, and flip onto a serving platter (or a half sheet). Ummm, what!!! Are you trying to take a nibble of your computer screen, or what? These will please any crowd! If there are any left over (doubtful), cover and store at room temperature.

We absolutely love this bread. My sister won't buy anything but. It's kinda expensive so when I came across this, I had to add it here so we (Mom, Chris, and I) could always have it and everyone else could enjoy it too. The first time I ever had it, it was with the Spinach Veggie dip...OMGOSH it was DEEEVINE! So...next time you don't wanna spend the money, whip it up yourself! It does take a while...but so worth it!
