Recipe video above. This is the crumpet recipe released by Warburtons, the UK's largest commercial maker of crumpets! The batter is extraordinarily easy to make, but cooking them may take practice to get the temperature right for your stove. But if you've nailed pancakes, you will nail crumpets!Double rising agent is the key here for the signature holes - baking powder PLUS yeast. Just one doesn't cut it, and baking soda doesn't work as well. It's alarming how much time I've lost watching the bubbles pop...it's mesmerising!!!
Recipe video above. This is a recipe for naan bread that's fluffy, bubbly and chewy, just as it should be. Nobody will ever mistake this for just another basic flatbread! Perfect for slopping up your favourite Indian curries – yet so good that you'll happily devour it plain, straight out of the skillet.Bearing in mind that we aren't cooking in nuclear-level 480°C hot tandoors, see in post for background notes on how I find this recipe to most closely replicates restaurant naan. Makes: 6 naans, ~15-16cm / 6 - 7" diameter. For more Indian recipes, browse the Indian collection.
Recipe video above. Also known as Parisian Flan, this traditional French custard tart is the most magnificent custard tart in the world (in my humble opinion!). It's like a giant Portuguese Tart - but better, because there's so much more custard! The custard is truly incredible - rich, creamy, but not overly sweet. Sets perfectly to cut neat slices but melts in your mouth.DO NOT BE DAUNTED by the lengthy looking instructions. At its core, it is just a puff pastry crust filled with custard. Details are provided to ensure there's enough information even for less confident bakers.(And PS, it's SUPPOSED to look rustic!)At its best in the 24 hours after 12 hours refrigeration after finished custard comes out of oven (crispiest base). Keeps 4 - 5 days but pastry starts to lose crispiness (it's still AWESOME though!).My typical workflow: Make custard and line pan with pastry in evening. Bake in morning, fridge all day, serve that evening. Or bake in early evening, fridge overnight, serve the next day.

Recipe video above. Here's a Pad Thai recipe that really does taste just as good as takeout from good Thai restaurants, and you'll find everything you need at the supermarket! I use chicken here but feel free to switch with any protein, even prawns/shrimp. If you're after a truly authentic Pad Thai recipe, see here - but be warned that most people will find it a little too "real" for their palettes because Pad Thai in Thailand has stronger fish sauce/dried shrimp "funk". (Don't misread that word! :))

Recipe video above. Thai Chicken Satay Skewers are tasty enough to eat plain but we'd never skip Thai Peanut Sauce for dipping! The essential ingredient for a really great peanut sauce is natural peanut butter with no added sugar or oil. But normal peanut butter will work fine too.
Recipe video above. A quintessential British dessert and a firm favourite world-wide, this is custardy on the inside, and golden and buttery on the surface! While pre-sliced bread works a treat, it's dinner party-worthy when made with bread that can be cut or torn into cubes. Crunchier surface, and better custardy texture inside! This is the Aussie / British version which is far less sweet than typical American Bread Pudding recipes (but still plenty sweet in my opinion!). Toppings are not optional!
Recipe video above. This is a recipe for a real Malaysian restaurant quality laksa made by sprucing up store bought laksa paste! You can't just dump store bought laksa paste into coconut broth! The key is to freshen up the paste by sautéing it with garlic, ginger, chilli and lemongrass. Makes a world of difference! This makes 2 large bowls. Because large is the only way to go with Laksa!
Recipe video above. This is a recipe for truly crispy Potato Rosti that's beautifully golden on the outside and fluffy on the inside. The secret is pan frying in the right fat! Butter = tasty but not crispy. Oil = crispy but flavourless. The Swiss cracked the code - use clarified butter (or ghee!). Buy it or make your own (it's super easy). And if you want ultra ultra crispy, make small thin ones instead - they are literally potato crisp crispy! This recipe would probably serve 6 normal people, but in my family it serves 4. Makes 1 giant rosti about 2cm / 4/5" thick, or 10 - 12 small rostis.
Recipe video above. Pierogi Ruskie's are Polish dumplings filled with cheesy, creamy mashed potatoes served with an onion butter sauce. They are even more delicious than they sound! Traditionally made with quark which is an European fresh cheese which isn't easily found in Australia, so I've used cheddar because I want this recipe to be as accessible as possible to many people to experience the greatness that is Pieorgis!!! More in Note 2.Excellent weekend project – eat some today and freeze some for later (they cook from frozen). Makes a nice big batch of 30 pierogis. For more dumplings of the world - head here!
Recipe video above. This dough is easy to work with and comes together in seconds using a good processor. While I really encourage you to make the dough, you'll still get an excellent empanada fix making this with store-bought puff pastry or shortcrust pastry.Empanada dough adapted from Kevin Is Cooking and the filling is based on the New York Times Cooking Beef Empanadas recipe (I found the flavour a bit mild and too dry, so I tweaked).

Recipe video above. The marinade for the chicken is so sensational that I use it even when I'm not making Gyros! This is fantastic for entertaining because you can just lay it all out for guests to help themselves. The smell when the chicken is cooking is incredible - you can really smell the oregano and garlic!
RECIPE VIDEO above. This is a Chef recipe and is one of the easiest Indian curries to make. The Butter Chicken Sauce is so good that you will want it on tap! Many restaurants take it over the top by adding copious amounts of ghee or butter into the sauce, but you'll find this rich enough as it is.And next time, try the streamlined One-Pan Baked Butter Chicken (readers are loving it!).
RECIPE VIDEO ABOVE. The smell of Middle Eastern spices while this is cooking is totally intoxicating!! Try this Lamb Kofta recipe once, and you'll be addicted for life! Traditionally cooked over charcoal, brilliant on the BBQ, but I usually cook these midweek on the stove. **great recipe for gatherings, DIY spread, make ahead**
This is made using the Australian way of making creamy caramel using condensed milk. While most recipes use golden syrup to get the caramel flavour, I find it works better to use a simple caramel – better flavour and the caramel is creamier. You don’t need a candy thermometer, and the caramel sets perfectly so it is beautifully soft and doesn’t run everywhere when you cut it. The topping is a chocolate ganache that is soft and melds into the caramel with every bite. This is decadent and luxurious, yet straight forward to make. Great show off dessert!!! Recipe VIDEO below.
Recipe video above. Unapologetically calorific, this is the famous French hot ham and cheese sandwich! If you want to make it the traditional way, do not skimp on cheese or butter, and do not even think about using low fat anything. 😂While it's thought of as a brunch/breakfast, Croque Monsieur is typically served as lunch in France with a side of fries and simple salad.Truly one of the greatest sandwiches in the world, one that I say everyone should experience at least once in their lives ….
Recipe video above. The crispy pork belly version of the famous Vietnamese sandwich, inspired by Ca Com in Melbourne, a famous banh mi shop. Hands down one of the best sandwiches I have ever made in my life, and my favourite type of banh mi (all my recipes here). Excellent food for sharing with friends and Sunday lunches. The Special Sauce is a copycat of the Ca Com sauce and it's an excellent match for crispy pork - thicker so it clings and doesn't soak and soften the skin or bread.PS The recipe for the crispy skin pork belly is based on the much-loved Crispy Pork Belly recipe. So you can have confidence that your pork WILL have perfect crispy crackling!
Recipe video above. Realistically, one knuckle will serve 2. But for wow factor, serve one per person!!!While producing tender Pork Knuckle flesh is straightforward enough, very few recipes truly nail the crispy crackling. So here is a recipe that finally does! The skin is crispy all over and fabulously bubbly, shattering into a thousand porky shards when you bite instead of breaking your teeth on hard, leathery patches!Meanwhile, the flesh is seasoned with traditional flavourings and the Pork Knuckle is served with an authentic, dark and malty German beer gravy. It's every carnivore's dream come true!
Recipe video above. This is the iconic Burnt Basque Cheesecake, in all its rustic perfection with the signature golden "burnt" surface that tastes like caramel, and light-as-air creamy vanilla cheesecake inside. Stunningly luscious yet light, and not that sweet at all!The surface becomes golden by baking at a higher temp than classic baked cheesecakes - 160C/320F vs 220°C/425°F for Basque. This recipe is not a basic "dump and beat" recipe, but the result is better. Texture is fluffier, as it should be, with no thick band of dry overcooked cheesecake (notorious problem!). Use a handheld electric beater or stand mixer with the paddle attachment. See Note 5 about speeds.
Recipe video above. This is David Chang's famous Momofuku Bossam (or Bo ssam), his take on the traditional Korean pork dish that costs US$250 at his NYC restuarant! Pork shoulder is dry cured so it's seasoned from end to end, then slow roasted until fall apart tender and finished with a brown sugar crust. Serve with condiments for DIY lettuce wraps for an epic eating experience that will be remembered for years to come!
Recipe video above. The dough for this recipe is ridiculously easy to make with only a minute or two of kneading. The bread is soft and pliable so it's perfect for using as a wrap, stuffed with whatever takes your fancy. It's also a great make ahead recipe - the dough keeps for around 3 days. See NOTES for substitutions, including using GLUTEN FREE flour. 30 minute resting time. Recipe VIDEO below.
Recipe video above. This Vietnamese lemongrass marinade is exceptional - you'll absolutely love it! This is one of my siganture recipes - it's as delicious as it is healthy, ideal for making ahead, for midweek meals and a cheap (impressive) meal idea for large groups. DON'T BE DAUNTED by the list of ingredients - the ingredients for the marinade and sauce are largely the same!
A crisp, buttery coconut biscuit that's as close to the original as you can get!
Recipe video above. This is a no-fuss waffle batter recipe that makes really great waffles that are delightfully crispy on the outside and delicately soft on the inside. Make them right now, or make the batter the night before for waffles with even softer insides - see Note 1!You need a waffle maker - see note 2 for my thoughts on economical v premium.Makes 9-10 with my good waffle maker (thicker, bigger), 12-14 with my Kmart waffle maker (which I still love!).

These are the acceptable face of culinary cute: their intensity guarantees the triumph of chic over prettiness. And, what's more, they're easy to make. You can make the mixture up a few hours in advance and put it ready and waiting in the prepared tins in the fridge until you want to cook them, which must be at the moment you're ready to eat them. You might think that preparing the tins sounds fiddly, but in fact the job is just demanding enough to make one feel uncharacteristically competent in a Blue Peter kind of a way, but not so much that any actual dexterity is required. For US cup measures, use the toggle at the top of the ingredients list.

Recipe video above. Pound Cake is a classic, very buttery vanilla cake commonly made in loaf form. The crumb is quite dense compared to typical cakes, but when made well, it should be moist, soft and melt-in-your mouth, as this one is!This Pound Cake recipe is based on one called "The Perfect Pound Cake" from "The Cake Bible" by Rose Levy Beranbaum. She tested it over 40 times and we’ve tried it many ways as well, but couldn't improve on it. So I’ve taken the liberty of changing the name here to the BEST Pound Cake. :-)Please make sure the milk, butter and eggs are at room temperature, as directed in the recipe. This is especially important for Pound Cake.

Growing up in Australia, pikelets were a treat we enjoyed for breakfast or any time of the day! Plus, learn the secret tip for the first batch to come out perfectly golden, rather than splotchy like they usually are! This recipe makes 12 pikelets. Don't bother counting the number of pikelets in the photos, I ate one. You should just be surprised that I managed to stop at ONE!
Recipe video above. While éclairs in the wonderful world of French pastries are made with custard hidden inside, éclairs as we know them here in Australia are split and generously filled with whipped cream. A neat trick for a great éclair cream filling is adding mascarpone. It adds structure so the cream doesn’t completely squirt out when you take a bite (because don’t you just hate that!?), as well as improving storage quality. And as for the choux pastry? It’s light-as-air and beautifully crisp, something you rarely see with store bought eclairs!
