Allowing the dough to rest 18 to 24 hours in the fridge will yield extra-pillowy and airy focaccia, though if you are pressed for time, you can make this start-to-finish in 3 hours. This 4-ingredient recipe requires only 5 minutes of hands-on time. Video guidance below! Adapted from the focaccia recipe in Bread Toast Crumbs. A few notes: Plan ahead: While you certainly could make this more quickly, it turns out especially well if you mix the dough the day before you plan on baking it. The second rise, too, takes 2 to 4 hours. If you are short on time and need to make the focaccia tonight: Let the mixed dough rise at room temperature until doubled, about 1.5 to 2 hours. Then proceed with the recipe, knowing the second rise will only take about 30 minutes. You can use various pans to make this focaccia such as: two 9-inch Pyrex pie plates. (Use butter + oil to prevent sticking.) One 9x13-inch pan, such as this USA pan — do not split the dough in half, if you use this option, which will create a thicker focaccia . A 13x18-inch rimmed sheet pan — this creates a thinner focaccia, which is great for slab sandwiches. As always, for best results, use a digital scale to measure the flour and water. I love SAF instant yeast. I buy it in bulk, transfer it to a quart storage container, and store it in my fridge for months. You can store it in the freezer also. If you are using active-dry yeast, simply sprinkle the yeast over the lukewarm water and let it stand for 15 minutes or until it gets foamy; then proceed with the recipe. Flour: You can use all-purpose or bread flour here with great results. If you live in a humid environment, I would suggest using bread flour. If you are in Canada or the UK, also consider using bread flour or consider holding back some of the water. Reference the video for how the texture of the bread should look; then add water back as needed.

La Caponata est l'un des plats qui m’ont fait aimer les aubergines - que je détestais cordialement tout au long de mon enfance et adolescence … La première fois quand je l’ai goûtée (elle a été préparée par la maman mi-sicilienne d’une jeune collègue, pour être partagée au cours d’un pique-nique sous les pins parasols dans la garrigue…), j’ai été étonnée d’y trouver des ingrédients que je n’aurais jamais penser à marier avec les aubergines. A cette époque, je ne connaissais pas encore le mélange méridional câpres-olives-raisins secs-fruits à coque (en fait, la caponata siciliana doit comporter des pignons de pin, mais la maman de Céline les avait remplacés par des amandes, et je l’ai toujours imitée). Ce mélange se retrouve assez souvent dans les recettes siciliennes et italiennes - mais aussi issues d’autres régions chaudes, comme l’Espagne et les pays d’Amérique latine. Par ailleurs, il semble que ce plat typiquement sicilien a des origines espagnoles… En tout cas, depuis la découverte de ce mélange en compagnie des aubergines, je suis convaincue qu’il est capable de rendre tout produit méconnaissable, dans le sens le plus positif du terme ! La caponata se déguste essentiellement froide et gagne en saveur quand elle est préparée en avance. On peut également se simplifier la vie en faisant frire les aubergines la veille. Une fois transféré dans un récipient en céramique ou en verre, le plat peut être gardé au frais pendant plusieurs jours sans problème. Il peut être servi en entrée, en accompagnement d’un plat de viande ou de poisson, ou encore comme garniture d’un plat de pâtes. Caponata siciliana Ingrédients : Environ 125 ml d’huile d'olive 1 kg de petites aubergines allongées, coupées en dés, en rondelles ou en demi-rondelles 1 gros oignon, émincé 2 branches de céleri, coupées en croissants 2 gousses d’ail, émincées 400 g de tomates très mûres pelées, épépinées et coupées en dés 100 g d’olives vertes dénoyautées et coupées en deux 2 c. à s. de câpres en saumure 2 c. à s. de pignons de pin (ou d’amandes mondées) 2 c. à s. de raisins secs 2 c. à s. de vinaigre de vin rouge de bonne qualité (ou de vinaigre balsamique) 2 c. à c. de sucre Quelques feuilles de basilic frais (facultatif) 2 c. à s. d’huile d'olive extra vierge (facultatif) Sel et poivre Préparation : Mettez les morceaux d’aubergines dans une passoire, saupoudrez-les de gros sel et laissez-les dégorger pendant une heure. Rincez-les et essorez-les en pressant bien. Faites-les frire en plusieurs fois dans environ 100 ml d'huile chaude jusqu'à ce qu’ils soient dorés. Sortez-les sur papier absorbant. (Cette étape peut être réalisée la veille.) Faites tremper les raisins secs dans le vinaigre (pour 15 minutes au moins). Ajoutez 25 ml d’huile d’olive dans la sauteuse et faites-y revenir l'oignon pendant 5 minutes. Ajouter le céleri et l’ail et laissez mijoter les légumes jusqu’à ce qu’ils soient tendres (environ 5 minutes). Rajoutez les tomates et le sucre. Laissez cuire pendant dix minutes à feu vif sans couvercle. Assaisonnez avec un peu de sel et de poivre. Remettez les aubergines dans la sauce et laissez cuire à feu doux pendant dix minutes. Rajoutez les olives, les pignons de pin (ou les amandes), les câpres et les raisins avec le vinaigre et laissez cuire encore une dizaine de minutes, ou jusqu’à ce que les légumes soient tendres et la sauce épaississe. Ôtez du feu et laissez refroidir. Servez le plat de préférence le lendemain, parsemé de feuilles de basilic frais, et éventuellement arrosé d’un filet d’huile d’olive extra-vierge. An exotic and colourful Moroccan Couscous with chickpeas, roasted red peppers, diced carrots, toasted almonds and plump raisins are tossed in a fragrant dressing of fresh garlic, tangy lemon juice, fruity extra virgin olive oil and an aromatic combination of fragrant seasonings: ground coriander, cumin and cinnamon. Simple and delicious, the dressing really highlights the roasted vegetables, which have already been sweetened and intensified in flavour during cooking. The chickpeas, and excellent source of protein, fibre and vitamins, add their own wonderful flavour and texture to this festive dish. Another feature of Moroccan Couscous is that it can be varied in endless ways: the carrots and red pepper can easily be replaced by sweet potato, pumpkin or eggplant; pistachios, pine nuts or walnuts can be used in lieu of almonds, and chopped dates, apricots or prunes can easily be replaced by the raisins. Light and delicious served either warm or cold, this colourful Moroccan Couscous salad is excellent paired with grilled lamb, chicken or even a traditional Tagine. Moroccan Couscous with roasted vegetables, chickpeas & almonds Serves 4 4 tbsp extra virgin olive oil 2 carrots, cut into quarters lengthways and thinly sliced 2 red peppers, diced 1 zucchini, thinly sliced 1 red onion, cut into wedges and separated 1/2 cup slivered almonds 4 tbsp freshly squeezed lemon juice 2 garlic cloves, minced 1 tsp turmeric 2 tsp ground cumin 2 tsp ground coriander 1/2 tsp ground cinnamon 2 tsp salt 2 cups couscous 1/2 cup raisins 2 1/2 cups chicken stock, brought to a boil 2 cup canned chickpeas, rinsed and drained 1/4 cup fresh cilantro, finely chopped plus extra for garnish 2 tbsp fresh mint, finely chopped plus extra for garnish Preheat the oven to 475°F. Toss the carrot, red pepper, zucchini and red onion in a baking dish with 1 tablespoon of the olive oil and bake for 15 minutes. While the vegetables are cooking, lightly toast the almonds in a frying pan until they're golden brown. Remove from the pan and set aside. In a small bowl, whisk together the remaining 3 tablespoons of olive oil, lemon juice, garlic, cumin, coriander, cinnamon and salt, and mix well. Five minutes before the vegetables have finished roasting, mix the couscous, turmeric and raisins in a large bowl and pour over the boiling stock. Cover with plastic wrap to seal in the steam, and let sit for five minutes. Then fluff the couscous with a fork to separate the grains and stir through the carrot, red pepper, red onion, almonds, chickpeas, mint and cilantro. Pour over the dressing and toss together until well combined. Serve on a large platter, either warm or at room temperature with a garnish of cilantro and chopped mint.
