Era nuestra gran crema de verduras pendiente. Siempre nos preguntábamos cómo no la habíamos posteado aún, pero por fin lo hicimos y hoy os la traemos. Es una crema que ha crecido con los años, empezamos haciéndola parecida a la crema de calabacín, algo muy sencillo, hasta acabar haciéndola así, usando fondos y rehogado. Esta va a ser nuestra última crema de la temporada, uno de nuestras cremas ideales para llevar al trabajo, y es que estando a las puertas del calor nos despedimos de estos menesteres hasta finales de año, que seguro que habremos probado alguna más. Fue de las primeras recetas que hicimos cuando nos emancipamos hará ya ocho años, y además es la crema de verduras favorita de Lola. ¿La razón? como a ella le chiflan las berenjenas embuchadas, se consigue un sabor parecido añadiendo un poco de vinagre. En definitiva, es una crema muy original, con un sabor profundo a berenjena, un regusto muy sustancioso y un color que cambia ligeramente según los ingredientes que echemos. Hemos probado muchas versiones y ésta creemos que es la mejor. Vamos con los ingredientes, para 2-3 personas, 2 berenjena mediana, 3 cucharadas de tomate frito casero (o rallamos 2 tomates), 1 puerro, 1 patata pequeña, caldo de ave, 1 cucharada de pimentón dulce, queso curado al gusto, sal, pimienta negra y aceite de oliva virgen extra. Para decorar jamón picado, queso rallado o lo que gustéis. Lo primero es ir estofando el puerro con tres cucharadas de aceite de oliva. Cuando esté bien rehogado, echaremos la berenjena en cubos y rehogaremos a fuego lento durante 20 minutos, dando vueltas de vez en cuando. A medio rehogar echaremos las patatas en trozos. Una vez todo esté bien listo, echaremos el pimentón y la sal. Se puede echar una pizca picante. Luego el tomate frito o el tomate fresco rallado, si echáis este último, dejarlo freír unos minutos, si echáis frito, remover y listo. Ahora el turno del caldo y, si os quedáis cortos, algo de agua. Lo dejaremos cocer 20 minutos o hasta que la patata esté tierna. Probamos antes de sal. Mientras cortamos el jamón y rallamos un poco de queso. Aquí listo. Lo pasamos por la túrmix o la batidora sin más y le añadimos el queso. Probamos de nuevo de sal y pimienta. Lo decoráis como gustéis, nosotros a lo extremeño, pimentón y jamón. Listo para tomar (o llevar en tupper). Salud.
Este año está lloviendo poco en comparación con otros, y vemos el sol más a menudo que de costumbre... Pero sigue haciendo frío, sobre todo de noche, y siguen apeteciéndo platos calientes como esta crema de col lombarda. Está tan rica y tiene un color tan bonito que es casi imposible que no guste. Este tipo de col se puede comer en crudo o cocinada, y tiene propiedades similares a las del repollo. Es rica en azufre, vitamina C y ácido cítrico. Aporta fibra y es fuente de antioxidantes... ¿Queréis más? Pues también es baja en calorías, así que si estáis a dieta podéis suprimir los quesitos de la receta y tendréis un primer plato muy ligero. INGREDIENTES: 1 col lombarda (1/2 si es grande) 1 cebolla 1 puerro 1 vaso de vino blanco caldo de pollo o verduras 10 quesitos en porciones (tipo Caserío) aceite de oliva pimienta sal almendras tostadas en cubitos (opcional) ELABORACIÓN: 1. Comenzamos preparando la verdura. Pelamos, lavamos y cortamos la cebolla en cubos grandes. Retiramos las parte verde del puerro y la punta, lo lavamos y lo cortamos en rodajas. Cortamos la col en juliana (no hace falta que sea muy fina), desehando el tronco central. La lavamos bien y la escurrimos. 2. A continuación, ponemos una cacerola al fuego con aceite en el fondo. Cuando esté caliente rehogamos las verdura, comenzando por la cebolla y el puerro. Una vez que empiecen a estar blandos añadimos la col y dejamos que se haga unos minutos, dando algunas vueltas para que no se pegue. 3. Ahora agregamos el vino, dejamos que el alcohol se evapore durante unos tres o cuatro minutos e incorporamos el caldo. Debe cubrir completamente la verdura, pero tampoco necesitamos que la sobrepase demasiado ya que la crema podría resultar excesivamente líquida. Salpimentamos al gusto. 4. Dejamos que se cocine todo a fuego moderado unos 20 o 25 minutos. Retiramos del fuego, añadimos los quesitos en porciones y trituramos con una batidora eléctrica hasta conseguir la textura deseada para la crema. Servimos espolvoreando almendra tostada en cubos por encima. ¡Buen provecho! It's officially fall and today is a nice balmy day at 64 degrees so far. I do love the cool mornings, but I'm sure that this won't last for long as we've had one hot summer...and it's not over yet. As I'm sitting here watching Rick Steves' ITALY Cities of Dreams shows I'm taken back to my trip to Italy with my mom and the wonderful memories we made. One of my best vacations ever! Of course the food was outstanding. I can remember every dish we ate all those years ago. Now that's an impression, and that's some good food. So I'm getting a hankering for some comfort food. So let's make some pasta. Fall is the perfect time for comfort food. You may recall that a neighbor of mine is from Sicily. She's passed on now but I treasure the time I got to spend with her hearing her stories of traveling to America at the age of 14 on a boat, landing in New Orleans! What an adventurous woman. And her food? to die for. Today's recipe is a meaty pasta sauce and is a variation of her Sicilian Spaghetti Sauce. Oh! this is soooo good. The recipe makes quite a bit of sauce, but not to fret, this freezes wonderfully. I've placed my extra sauce in a airtight container and it will keep in the freezer for several months to take out and have again on a cold fall night. Perfect double duty! It also takes a while to make this sauce so make sure to do this on a weekend. While I've never been to Sicily it's certainly on my bucket list. Thank you Nettie (my 4th grandmother!) for all your stories and your inspiration. Nettie's tomato marinara, Sicilian Sauce is wonderful if you don't like meat in your sauce. Manga! Manga! Sicilian Spaghetti Sauce adapted from my Sicilian neighbor Nettie serves 6 1/2 lb. sweet or hot Italian sausage, ground or casings removed 1/2 lb. 10% lean ground sirloin 1 medium yellow onion, diced 2 garlic cloves, minced 2 15oz cans of good quality tomato sauce 1 6oz can of tomato paste 3 cups water 1 t salt 2 t dried parsley 1 t dried basil 1/2 t dried thyme 1/2 t red pepper flakes Cooked spaghetti Grated Parmesan cheese (optional) Cook sausage and ground sirloin in a large skillet over medium heat about 6 min. Stir meat as it cooks until it crumbles. Add onion and garlic to the meat and continue to cook and stir another 4 minutes or until onion is soft and meat is no longer pink. Drain if necessary. Set aside. In a large soup pot or Dutch oven, add tomato sauce, paste, and water. Stir to combine. Add your spices, salt, parsley, basil, thyme, and red pepper flakes. Stir to combine. Add your meat and onion mixture. Cook on medium low for about 40-50 minutes or until sauce thickens slightly. Serve over hot spaghetti and top with grate Parmesan cheese if desired.

La col lombarda suelo consumirla habitualmente en ensaladas, cortaba bien finita junto con diferentes tipos de lechuga, otras verduras y con un buen aliño, pero en cremas también queda deliciosa, así como en guarniciones o acompañamiento de algunos platos. Por su riqueza en nutrientes, minerales y vitaminas, merece la pena consumirla cruda, donde además podemos apreciar su color púrpura o morado, que cambia un poco cuando la cocemos, ya que pierde su color en el agua si no se le añade algún elemento ácido como vinagre, vino o zumo de limón, que actúan como fijador. Pertenece a la familia de las crucíferas y su prima más cercana es la col blanca, que aunque no se le parece en el color si en la forma del repollo, que puede ser esférico, ovalado o achatado, según las variedades de las hojas. Es una verdura especialmente apreciada y popular en los países fríos, cuanto más al norte de Europa, más lombarda se consume habitualmente. Esta información, así como la receta es del libro “Las verduras de muchas maneras” de Karin Leiz, aunque le hecho alguna pequeña variación. La receta original utiliza crema de leche espesa o nata mezclada con zumo de limón para poner por encima de la crema una vez hecha y en mi caso he utilizado unos quesitos cremosos y un poco de leche, que he incorporado a la crema antes de triturarla. INGREDIENTES: 600 gr. de col lombarda 50 gr. de bacon o de panceta en daditos 25 gr. de mantequilla 2 quesitos cremosos 75 ml. de leche 150 ml. de vino blanco seco 500 ml. de caldo de ave o de verduras 1 diente de ajo 2 manzanas ácidas Un poco de zumo de limón Una pizca de comino molido 1 cucharadita de aceite de oliva Sal Pimienta negra recién molida Un poco de cebollino picado Preparación con Thermomix: Ponemos en el vaso la mantequilla, el aceite, el ajo troceado, el comino molido y el bacon o panceta, programamos 6 minutos, temperatura Varoma, velocidad 1. Mientras tanto vamos troceando la lombarda, retirando las partes más duras del tronco y partimos las manzanas que rociaremos con zumo de limón para evitar que ennegrezcan. Cuando finalice el tiempo programado, incorporamos la lombarda y las manzanas, cerramos el vaso y troceamos unos segundos a velocidad 5, moviendo con la espátula por el bocal para que se trocee por igual. Si hiciera falta quitamos la tapa y removemos para continuar troceando. A continuación añadimos una pizca de sal y otra de pimienta negra recién molida, un poco de zumo de limón (que ayuda a fijar el color, como he explicado antes) y programamos 2 minutos, temperatura 90º, velocidad 3, para rehogar todo junto. Añadimos el vino y programamos 3 minutos, temperatura Varoma, velocidad 3. Después incorporamos el caldo y programamos 15 minutos, temperatura Varoma, velocidad 4. Una vez haya transcurrido el tiempo, añadimos los quesitos cremosos, la leche y rectificamos de sal y pimienta, si fuera necesario. Ahora trituramos la crema, para ello programamos 1 minuto velocidad 8, comprobamos si está a nuestro gusto y si la queremos más fina, volvemos a programar 1 minuto más a velocidad 8. Si aún queremos que quede más fina lo que podemos hacer es pasarla por un colador de malla fina, aunque en este caso no lo hecho. A continuación servimos la crema, ponemos encima unos daditos de bacon, un poco de cebollino picado finamente y rociamos con un hilo de aceite de oliva. Si lo preferimos podemos servir con un poco de crema de leche espesa o de nata mezclada con unas gotas de zumo de limón. Preparación tradicional: Cortamos o rallamos la col en tiras finas, retirando las partes más duras del tronco. Troceamos las manzanas o bien las rallamos con el rallador de agujero grueso y las rociamos con el zumo de limón para que no se ennegrezcan. Calentamos el aceite y la mantequilla en una cazuela o en una sartén grande y sofreímos los daditos de bacon o de panceta. Cuando estén dorados reservamos unos cuantos para decorar la crema y dejamos el resto en la cazuela o sartén. Añadimos el ajo picado y sofreímos junto con el bacon o panceta un poco más para que se dore. Incorporamos una pizca de comino y removemos. A continuación añadimos la lombarda, las manzanas, una pizca de sal y otra de pimienta negra recién molida, un poco de zumo de limón (que ayuda a fijar el color, como he explicado antes) y rehogamos durante 3 ó 4 minutos a fuego suave. Subimos el fuego y vertemos el vino, removemos y continuamos con la cocción 2 minutos más. Añadimos el caldo y cuando rompa a hervir bajamos el fuego, tapamos y dejamos cocer hasta que esté tierna, aproximadamente 15 minutos. Fuera del fuego añadimos los quesitos cremosos, la leche, rectificamos de sal y pimienta, si fuera necesario, y trituramos muy bien con la batidora hasta conseguir una crema muy fina. En caso de que queramos conseguir una crema todavía más fina la podemos pasar por un colador de malla fina, aunque en este caso no la he pasado. Volvemos a colocar la cazuela o sartén al fuego hasta que comience a hervir, de esta forma la intensidad del color que se pierde al triturar la crema se recupera un poco. Servimos de la forma que he explicado anteriormente.
