Ideally, you want to do this one at a time, and stir after adding each egg just to ensure everything will be ok.You will need to create the egg wash, here you have to whisk the last egg with 1 tbsp of water. After you finish this, just set it aside.The next step involves transferring the pate a choux to a pastry bag. You should pipe multiple rounds onto the pans, around 1 or 1.5 inches should be good for any round. After that, you can smooth the peaks with your finger and round the tops. Brush the tops with egg wash.The idea now is to try and bake until you see the puffs have a gold-brown coloring and they rise. You can let it all cool on the wire racks. You can store the puffs at room temperature, which can be good for up to a day.

Ir tie žmonės tikriausiai turi savo mėgstamą receptą, savo nuomonę, koks turi būti kibinas, kas jis iš viso yra. Taip ir turėtų būti. Mes kiekvienas turime savo nuomonę, savo patyrimą ir savą skonį bei supratimą. Aš tikrai neišmanau, koks tas tikrasis kibinas turėtų būti, nors visada užsukę į Trakus jų ragaudavome be išimties. Ir tiesą pasakius, nelabai man svarbu iš ko pagaminta jų tešla, ar koks įdaras tradiciškesnis: su aviena, ar su kiauliena, varške ar kokiais kopūstais. Man maistas visų pirma turi būti skanus. Skonis svarbiausia. Po to galima kalbėti apie sudėtį, maistingumą, papročius, grožį ir t.t. Ką tuo noriu pasakyti? Ogi kad šis receptas nėra autentiškas, tradicinis ir tikrai netobulas. Tačiau man kiekvieną kartą pasiteisinantis bei skanus. Tai pirmas ir iki šiol vienintelis receptas pagal kurį teko kepti kibinus. Radau, tiko, patiko. Kibinų tešla - trapi, įdaras - sultingas. Tai mano kibinų receptas, kurį labai seniai radau 'Darbštuolės' žurnale (turbūt vienas pirmųjų mano praktinių žurnalų). Džiaugiuosi, kad receptą išsaugojau ir galiu su Jumis pasidalinti. Galbūt atsiras žmonių, kuriems taip pat patiks. Teisybę pasakius, aš apskritai nedažnai kepu ir darau taip lietuvių mėgstamus desertus ar kepinius (net ir antruosius patiekalus). Vieną ar kelis kartus per metus, o kartais dar rečiau. Neturiu atsakymo kodėl. Tiesiog taip pas mus yra. Nereikia mums dažnai valgyti cepelinų, kugelių, virtinukų, žagarėlių ar kibinų. Užtenka tų retų progų. Todėl neturiu daug patirties ir net virvutę susukti reikia pasimokyti. Šypt. Patarimai, pastebėjimai. Mėsa pjaustoma smulkiai, o ne malama, kad būtų sultingesnė. Esu bandžiusi abiems būdais. Man skaniau su kapota mėsa. Sudėtingumas. Vidutinio sudėtingumo. Mano recepto ir skonio vertinimas. 4/5. Labai skanu, kartosiu. Kepiau ne vieną kartą. Kibinai Receptas adaptuotas iš žurnalo 'Darbštuolė' Ingredientai Tešlai 500 g miltų 250 g šalto sviesto 100 ml grietinės 100 ml majonezo Žiupsnelis druskos Įdarui 500 g kiaulienos sprandinės 1 nedidelis svogūnas Druskos, pipirų pagal skonį Aptepimui 1 kiaušinis 1 šaukštas vandens ar pieno Gaminimo eiga Ruošiame tešlą. Į dubenį berkite miltus, druską, išmaišykite. Sudėkite kubeliais supjaustytą sviestą (arba sutarkuokite burokine tarka) ir viską trinkite tarp pirštų, kol gausis trupininė masė. Grietinę ir majonezą sumaišykite ir supilkite į miltus. Užminkykite tešlą, suformuokite kamuoliuką. Tešlą suvyniokite į plėvelę ir dėkite į šaldytuvą valandai. Įdarui kiaulieną smulkiai supjaustykite, sumaišykite su smulkiai pjaustytu svogūnu. Paskaninkite prieskoniais. Išimkite tešlą iš šaldytuvo. Padalinkite į 12 lygių dalių. Kiekvieną tešlos dalį iškočiokite į apskritimą, dėkite mėsos įdaro, suimkite kraštus, užspauskite ir gražiai susukite. Orkaitę įkaitinkite iki 180 laipsnių. Kepimo formas išklokite kepimo popieriumi ar patepkite riebalais, pabarstykite miltais. Sudėkite kibinus ant skardų. Patepkite kiaušinio plakiniu. Kepkite apie 30-40 minučių. Crumbly meat pasties. Meat Pasties Recipe adapted from the magazine 'Darbstuole' Ingredients For the pastry 500 g plain flour 250 g cold butter 100 ml sour cream 100 ml mayonnaise Pinch of salt For the filling 500 g diced pork 1 small onion Salt and pepper to taste For the egg wash1 egg 1 tbsp water or milk Instructions Make the pastry. In a bowl mix the flour, salt. Add the diced butter and rub everything between your fingertips until the crumbs form. Mix the sour cream and mayonnaise and add to the mixture. Knead into a pastry, form a ball, wrap it in the cling film and put to chill for an hour to the fridge. For the filling dice the pork, mix with chopped onions, season with salt and pepper. Take the pastry from the fridge. Divide into 12 equal pieces. Roll out each piece into a circle, add some filling, press the sides of it and twist the top nicely. Heat the oven to 180 degrees. Grease and sprinkle with the flour your baking sheets. Arrange the pasties on the baking sheets, brush with some egg wash. Bake for 30-40 minutes until golden brown.
