People—not just the Irish—have been eating blood puddings for centuries, in cultures all around the world. No Irish fry is truly complete without at least a slice of black and a slice of white pudding. And it's not just for breakfast anymore. Talented Irish chefs have found ways to incorporate it into salads and main dishes. Black pudding recipe vary wildly throughout Ireland; some include barley, breadcrumbs, and flour, but oatmeal is the old-fashioned thickener. Be sure it's steel-cut or pinhead oatmeal, and cook it until just tender. Individual nubs of oats should be visible in the final product. Store-bought versions will always be made in sausage casings, unlike this recipe, packed into a loaf pan. It is far easier to buy black pudding ready-made, and there are lots of artisan producers making truly worthy black versions. But if you're able to come into possession of fresh pig's blood, you'll be all set to make this recipe. And if not—well, you'll know precisely what a good black pudding should contain.

Curing Time: 48 months Need we say more? This is ham is revered by ham lovers around the World. Cinco Jotas acorn-fed Ibérico ham is Spain's national treasure. It's an unrivaled product obtained from the rear legs of Ibérico pigs raised free range in the meadows of south-west Spain. Ibérico de Bellota is the the World's ultimate cured pork. And in the World of Ibérico, Cinco Jotas is known as one of the most elite brands. In fact, the word Jabugo, the town made famous by Cinco Jotas, is now synonymous with top quality Ibérico ham. Cinco Jotas uses only 100% genetically pure bred Ibérico pigs that live their entire lives roaming the countryside of Spain. Some other companies cross breed Ibérico pigs with other breeds to increase the litter size and meat production. Cinco Jotas prefers to use only 100% pure Ibérico even though it is more expensive. Each fall the breeders set aside a select group of young pigs, allowing them to roam the dehesa woodlands. There they feast upon acorns which fall in abundance from the holm oak and cork trees. They gorge themselves, putting on at least two pounds of weight each day! It is important to note that if you see a paleta or ham advertised as simply 'Ibérico' but not 'Bellota', the animals did not live this idyllic lifestyle and the quality of the ham is not the same. When it is time for their sacrifice (the Spanish term for slaughter), these genetically unique animals produce Paleta Ibérico de Bellota that are marbled with rich golden fat infused with the flavor of the Ibérico pigs' favorite food: the acorn - 'bellota' in Spanish. Remarkably, a good portion of which is mono-unsaturated, similar to healthy olive oil. Sliced paper-thin, it glistens at room temperature and provides an inimitable rich nutty flavor and tender texture. Cinco Jotas puts a gourmet delight within your reach: the only ham that keeps the purity and distinction of it's historic Ibérico breed. At the same time, it unveils textures and aromas able to charm the most demanding of palates. You just can't go wrong with Cinco Jotas Ibérico ham. * Gluten free

My editor, Maria Guarnaschelli, suggested this recipe, based on her memory of a savory pie served at a London pub. One half of the pie was filled with pork and the other with apples. As I later learned, that dish has its roots in an eighteenth-century workingman's lunch called the Bedfordshire Clanger—a hand-held pie filled with meat on one end and jam on the other. It was a compact way to serve lunch and dessert in one package. In adapting this idea to my own taste, I decided to layer apples on top of a spiced ground pork filling, rather than setting the two ingredients side by side. The flavors are fantastic together, and this dish has been the hit of many parties. It makes an especially good buffet option, as it can be served warm or at room temperature. Apple Notes: As with all pie recipes, you want firm fruit here. Some good examples: Granny Smith, Arkansas Black, and Northern Spy for tart apples; and Golden Delicious, Jazz, or Pink Lady for sweet ones. Equipment: 10- to 12-inch skillet; food processor; 9-inch deep-dish pie plate, preferably glass; parchment paper or wax paper
