Kalcone se i inače pripremaju od klasičnog pizza testa koje je posno, odnosno bez namirnica životinjskog porekla. Obično je i nadev sličan onom koji se najčešće koristi za pizzu, a to su šunka, mocarela, kačkavalj ili neki drugi sir. Međutim, ove kalcone su posne jer sam za nadev koristila šampinjone i ajvar što je odlična alternativa klasičnom pizza punjenju. Posne kalcone Sastojci: • Za testo: 20 g svežeg kvasca (ili jedna kesica od 10 g suvog) 250 ml tople vode 1 kašičica šećera oko 400 (+50) g brašna pola kašičice soli 3 kašike maslinovog ulja • Za nadev: 100 g ajvara 100 g mariniranih šampinjona sušeni origano ili bosiljak Priprema: • U činiju za mešenje sipati toplu vodu, po kašičicu šećera i brašna i izmrvljen kvasac. Promešati da se kvasac rastvori i ostaviti na toplom mestu da zapeni. • U aktiviran kvasac staviti ulje, so i postepeno dodati brašno i umesiti glatko testo. Činiju pokriti pa ostaviti na toplom mestu najmanje 45 minuta da se testo udvostruči. • Naraslo testo izručiti na podlogu posutu brašnom. Podeliti ga na 6 jednakih delova, oblikovati kuglice i odmah ih pokriti krpom da se ne suše. • Podlogu posuti brašnom pa pomoću oklagije razvući prvu kuglu testa u kružni oblik. Potrudite se prilikom razvlačenja testa da posebno rub bude lepo istanjen. Na jednu polovinu testa staviti nadev: namazati ajvar i posuti ga šampinjonima. Vodite računa da najmanje 1 cm na rubu testa ostane čisto, odnosno bez nadeva. Slobodni rub testa premazati vodom, kako bi se krajevi bolje "zalepili" i na taj način zatvorili kalconu. Prebaciti preko nadeva slobodnu polovinu testa. Zatvoriti rub kalcone tako što ćete ga dobro pritisnuti prstima, kako nadev ne bi iscureo tokom pečenja. Na isti način uraditi i sa preostalim testom. • Pleh za pečenje obložiti pek papirom. Oblikovane kalcone staviti na pleh. Napraviti mali razmak između njih, jer će u toku pečenja da narastu. Pokriti ih suvom krpom i ostaviti na toplom mestu oko 15 minuta pa uključiti rernu da se ugreje na 200 stepeni. Pre pečenja, oštrim nožem zaseći testo svake kalcone kako bi kroz te proreze tokom pečenja ispario višak tečnosti. Premazati ih uljem i staviti u zagrejanu rernu da se peku. • Kalcone peći na 220 stepeni oko 15 minuta, odnosno dok ne porumene. Vruće kalcone premazati maslinovim uljem u koje ste dodali kašičicu sušenog origana.
