I can't wait to share this book (and this Boozy Pudding Cake!) with you today. It's Ree's latest: The Pioneer Woman Cooks: A Year of Holidays The book is so beautiful that it's not with my cookbooks...it's on my coffee table. I think this holiday book may be my favorite. Of course, I said that about Ree's last one and the one before that, but I really, really love this book. The Pioneer Woman Cooks: A Year of Holidays is divided up by, you guessed it, holidays. You'll find recipes for Valentine's Day, Cinco de Mayo, Thanksgiving, Christmas, New Year's Eve...and everything in between. All total: 140 recipes, all presented in Ree's signature step-by-step style. You know I went right for the dessert pages, right? I don't know what this says about me, but this Halloween "Cheese Ball of Death" really speaks to me. Any recipe that calls for a gummy tarantula has to be a winner. Of course, you'll find lots of pictures of the ranch and cowboys. Do you read cookbooks like novels? Me, too. I love those little intro parts before the recipes. Well, Ree writes them like no other. I had the best time reading through the book and hearing Ree's voice in my head. (Does that sound weird?) Now, let me introduce you to a cake. I have a thing for Bundt Cakes, but only a GOOD Bundt. This is a GOOD one. Like, reeeeeaaaaallllly good. A boozy cake. A boozy cake from Ree's book that is responsible for my extra three pounds this week. I made Ree's cake and *promised* myself that I would have just a sliver after taking the pictures. You can see in one of the pictures that the first slice out was really small. That was my slice. THEN, I decided that you really couldn't see the beautiful, moist cake, so I sliced off another piece...this time a pretty big honkin' piece. I took the pictures, stood (I didn't even bother sitting) over the table, and INHALED both pieces. Inhaled, I tell you. This cake is fantastic. I'm not sure if it's the booze, or the brown sugar pecans on the top, or the one and a half sticks of butter that are melted and poured over the cake after it bakes, or what. The combination of it all is magical. [Note: the cake recipe calls for rum, and I used Kahlua...did you know Kahlua is rum and coffee liqueur? You do now!] Christmas Rum Pudding Cake {from The Pioneer Woman Cooks: A Year of Holidays} Cake: 1/2 cup lightly packed brown sugar 1/2 cup finely chopped pecans 1 box yellow cake mix 1 (3.4 oz.) package vanilla cook-and-serve pudding mix 4 eggs 1/2 cup water 1/2 cup canola oil 1/2 cup dark rum (or Kahlua) Glaze: 3/4 cup (1 1/2 sticks) butter 1 1/2 cups sugar 1/4 cup water 3/4 cups dark rum (or Kahlua) Preheat oven to 325. Thoroughly grease a Bundt pan. Sprinkle the brown sugar and pecans in the bottom of the pan. In a bowl of an electric mixer, beat the cake mix, pudding mix, eggs, water, oil, and rum. Mix until smooth and totally combined. Pour the batter into the prepared pan and bake for 50-60 minutes until a toothpick comes out clean. When the cake has about 10 minutes to go, make the glaze. Melt the butter and sugar in a saucepan over medium heat. Then add the water and bring to a boil. Boil for 4-5 minutes, or until thick. Turn off the heat and add the rum. Turn the heat back on and cook for 1 minute more. Remove the cake from the oven and let it cool in the pan for 5 minutes. Use a skewer or toothpick to poke holes all over the surface of the cake. Drizzle half of the glaze over the cake and down the sides. Let it sit in the pan for 10-15 minutes, letting the glaze soak in. Carefully invert the cake onto a serving platter. Slowly drizzle the remainder of the glaze over the top, giving the cake a chance to absorb as much as possible. Let the cake sit for a couple of hours to make sure it's really moist and rummy...or Kahlua-y in my case. Eat. Two pieces...while hovering over the table. It's too good to waste time sitting, people. Despite its ubiquity in bakeries nationwide (and in mix form on grocery store shelves), great homemade versions of this chocolate-on-vanilla duo are somewhat elusive. But after months of testing, we think we've nailed it. Join us in celebrating this classic American cake and the birthdays it commemorates; crowned our 2019 Recipe of the Year.

Ich esse sie nicht nur sehr gerne - zumindest solange sich der Anteil an normaler, weißer Sahne in Grenzen hält (Schokosahne geht natürlich immer:)) - aber noch lieber backe ich sie ehrlich gesagt. Ich finde es spannend, mir davor zu überlegen, welche Füllungen ich kombinieren könnte und welche Böden gut zu diesen passen würden. Vor allem aber das Zusammensetzten der verschiedenen Schichten macht großen Spaß. Wenn man dann endlich die fertige Torte sieht, das Resultat nach einem langen Tag in der Küche, ist man schon immer ein kleines bisschen stolz auf sich und das, was man geleistet hat, wenn denn die Torte auch so ausgefallen ist wie gewünscht und erhofft. Heute habe ich euch das Rezept der Torte mitgebracht, mit der alles anfing und ich meine Leidenschaft für das Backen entdeckt habe. Diese Torte war nämlich die erste, die ich in meinem Leben gebacken habe und überhaupt das erste, was ich je ganz alleine gebacken habe. Mittlerweile habe ich sie schon einige Male gebacken, das Rezept dabei immer ein bisschen verändert und bin nun endlich so zufrieden damit, dass ich es euch gleich vorstellen muss. Da ich schon immer ein großer Schokoladen und Vanillefan war, hat mich die Torte durch ihre Kombination begeistert, denn wieso sich immer zwischen Schokolade und Vanille entscheiden müssen, wenn man doch auch beides haben kann? Die Torte schmeckt super lecker, ist aber durch die Vanillebuttercreme, die Schokosahne und die Schokoganache schon eher mächtig. Jedoch finde ich, eine Torte darf auch ruhig mal üppig sein. Außerdem muss man ja nicht immer gleich die halbe Torte essen, man kann sich ja zur Abwechslung auch mal mit einem schmalen Stück begnügen ;) Zutaten Biskuit: 4 Eier 4 EL warmes Wasser 150 g Zucker 1 Pck. Bourbon Vanillezucker 120 g Mehl 40 g Mondamin (Stärke) 1 TL Backpulver Schoko-Biskuit: 5 Eier 100 g weiche Butter 50 g Puderzucker 50 g Zucker 120 g Vollmilchschokolade 50 g Nuss-Nougat Creme 150 g Mandeln, gemahlen 50 g Mehl ½ Pck. Backpulver Vanillecreme: 250 ml Milch 1 Pck. Vanillepuddingpulver 1 Eigelb 100 g Zucker 1 Pck. Bourbon Vanillezucker 1 EL Rum 250 g weiche Butter Schokosahne: (am Tag davor bereits vorbereiten!) 250 ml Sahne 100 g Vollmilchschokolade 100 g Zartbitterschokolade Glasur (Ganache): 200 ml Sahne 200 g Zartbitterschokolade 100 g Vollmilchschokolade 40 g Puderzucker Zubereitung Schokosahne: - Sahne aufkochen lassen und die zerkleinerte Schokolade langsam einrühren, bis diese geschmolzen ist - Schokosahne in eine Schüssel füllen, mit Frischhaltefolie abdecken und über Nacht in den Kühlschrank stellen Biskuit: - Eier trennen, Eiweiß in der Zwischenzeit in den Kühlschrank stellen - Eigelb mit 4 EL warmem Wasser solange schlagen bis die Masse schaumig und heller wird - nach und nach Zucker und Vanillezucker zugeben und weiter schlagen bis alles cremig ist - Eiweiß steif schlagen und unter die Eiermasse heben - Mehl, Stärke und Backpulver vermischen und in die Schüssel sieben (wichtig, damit keine Klumpen entstehen!) und vorsichtig unter die Eiermasse heben - wenn alles miteinander vermengt ist, Teig in eine mit Backpapier ausgelegte Springform (Ø 26 cm) füllen, den Rand mit Alufolie umwickeln (damit der Biskuit schön gleichmäßig hochbäckt) und im vorgeheizten Ofen bei 175°C 25-30 min. backen bis der Biskuit goldbraun ist, unbedingt Stäbchenprobe machen! - kurz auskühlen lassen, dann aus der Springform lösen, auf eine mit Backpapier ausgelegte Oberfläche stürzen, Backpapier abziehen und komplett auskühlen lassen - anschließend den Biskuitboden einmal durchschneiden Schokobiskuit: - Schokolade in einem Topf im Wasserbad schmelzen lassen - gemahlene Mandeln, Mehl und Backpulver in einer Schüssel mischen - Butter in eine Schüssel geben; Eier trennen, Eigelb zur Butter geben - Eiklar in einer Schüssel steif schlagen, währenddessen Zucker einrieseln lassen und anschließend die geschmolzene Schokolade unterziehen - Nougat-Creme in einem kleinen Topf schmelzen lassen - Butter mit dem Eigelb schaumig schlagen, Puderzucker dazugeben und geschmolzenes Nougat unterrühren, dann die Mandeln mit dem Mehl und Backpulver einrühren - zum Schluss ca. 1/3 des Schokoschnees unterrühren um die Mandel-Nougat-Masse etwas aufzulockern und anschließend den restlichen Schokoschnee nur vorsichtig unterheben, denn die Masse sollte locker und luftig bleiben - wenn alles miteinander vermengt ist, Teig in eine mit Backpapier ausgelegte Springform (Ø 26 cm) füllen, den Rand mit Alufolie umwickeln und im vorgeheizten Ofen bei 180°C ca. 40 min. backen, unbedingt Stäbchenprobe machen! - kurz auskühlen lassen, dann aus der Springform lösen, auf eine mit Backpapier ausgelegte Oberfläche stürzen, Backpapier abziehen und komplett auskühlen lassen - anschließend den Biskuitboden einmal durchschneiden Vanillecreme: - aus Milch und Puddingpulver einen Pudding nach Packungsanleitung kochen, - auskühlen lassen, zwischendurch jedoch immer wieder umrühren, denn der Pudding sollte nicht fest werden - Butter, Zucker, Vanillezucker, Eigelb und Rum schaumig schlagen, anschließend den Pudding unterrühren Zusammensetzen 1. den ersten Schoko-Biskuitboden auf eine Tortenplatte setzen, Tortenring drum rum stellen 2. die Hälfte der Vanillecreme auf den Schokoboden streichen 3. den ersten hellen Biskuitboden daraufsetzen 4. darauf die ganze Schokosahne verstreichen 5. nun den zweiten Schokoboden darauf setzen 6. restliche Vanillecreme verteilen 7. den Abschluss bildet der zweite helle Biskuitboden -Torte anschließend für ca. 2 Stunden in den Kühlschrank stellen Glasur (Ganache): - in der Zwischenzeit die Glasur zubereiten - in einem Topf Sahne mit Puderzucker aufkochen lassen, anschließend vom Herd nehmen und zerkleinerte Schokolade einrühren, bis diese geschmolzen ist - in eine Schüssel füllen und in den Kühlschrank stellen für ca. 1-2 Stunden, bis sie zähflüssig ist und sich zum verstreichen eignet - als Abschluss, die Torte aus dem Tortenring lösen, komplett mit der Schokoganache einstreichen und fertig ist das Meisterwerk! :) - evtl. mit Mandelkrokant oder anderem verzieren Ich weiß, verzieren könnte ich die Torte sicher etwas aufwändiger und ausgefallener. Den vielen Möglichkeiten sind keine Grenzen gesetzt. Doch bisher habe ich mich da noch nicht so ganz herangetraut und ich finde schlichte Torten eigentlich auch sehr schön, denn durch das Anschneiden werden die meisten Torten mit ihren abwechselnden Schichten meiner Meinung nach sowie gleich viel aufregender. Aber in Zukunft werde ich mir sicher ein paar Gedanken zum Thema "Tortenverzierung" machen. Viele Grüße,
