We don't really eat out all that much. Our rationale is that it's not very enjoyable to pack up three kids and eat at a crowded, over-priced, chain restaurant that only has mostly-mediocre food. We can do better at home, for considerably less expense and hassle. When the husband and I do eat out at a restaurant, it's gonna be for a date night and it will someplace that is not inexpensive or --ahem-- kid-friendly. It doesn't happen that often, but when it does we want to relax and make sure it's worth our while from a foodie perspective. With that said, there are a couple of chain restaurant dishes that I do miss and often think about. For example, I really love the Alice Springs Chicken at Outback Steakhouse. (I don't love it enough to go there and pay for it; but I love it nonetheless.) Imagine how happy I was to find a copycat recipe for said chicken that was just as good, if not better than the original version. Score! I love finding ways to have our favorite restaurant-type meals at home...it makes me feel all savvy and crafty. Kinda like I've found a way to outsmart the system. Ha! Take that chain restaurants!!! I've even renamed my copycat version, to show you who's boss. Victory is mine! Australian Chicken Adapted From: sixsistersstuff.com via Pinterest Ingredients: cooking spray 4 boneless skinless chicken breasts, pounded to 1/2 inch thickness Lawry's seasoning salt to taste 6 slices bacon, cut in half 1 cup of your favorite honey mustard salad dressing 1/2 tablespoon of dried onion flakes 1 cup sliced fresh mushrooms salt to taste 2 cups shredded sharp cheddar cheese Directions: Preheat oven to 350 degrees. Spray a 9 x 13 glass dish with cooking spray and set aside. Lightly sprinkle seasoned salt on both sides of chicken and set aside. In a non-stick skillet, cook bacon until crispy. Remove bacon from pan, reserving the bacon grease to a separate bowl. Drain bacon on a plate lined with paper towels and set aside. In the same non-stick skillet, add about a tablespoon of bacon grease back to the pan. Heat grease over medium-high heat. Saute the mushrooms in the grease with a pinch of salt. Once mushrooms are cooked, remove to separate bowl and set aside (I put mine along side my draining bacon to save on doing dishes later.) Again, in the same skillet, add another tablespoon of bacon grease back to the pan and heat over medium-high heat. Brown seasoned chicken on both sides, about 3-4 minutes on each side. Place browned chicken in prepared glass dish. Sprinkle the chicken with dried onion flakes. Pour half of the honey mustard salad dressing over the chicken. Top each chicken breast with two halves of bacon and a spoonful of the cooked mushrooms. Drizzle the remaining honey mustard dressing over top of the mushrooms, on each breast. Cover chicken with shredded cheese and bake at 350 for 20-25 minutes, or until chicken is done thoroughly and cheese is melted and bubbly. The Result: This satisfied my fix, for sure. My kiddos loved it, and had thirds! The husband said that he thought it was better than the restaurant version, and I think he's right. It was pretty darn spectacular. This is a keeper recipe for sure!

Since 1967 increases of as much as 250 millimetres (10 in) per year in annual rainfall over the whole region. Recent studies suggest Asian pollution and not global warming as the cause of increased rainfall in the area. Kimberly Boab Tree Jail, Gibb river road Much of the Kimberley is chiefly covered in open savanna woodland dominated by low bloodwood and boab trees with Darwin stringybark and Darwin woollybutt eucalypts in the wetter areas. The red sandy soil of the Dampier Peninsula in the south is known for its characteristic pindan wooded grassland while in the more fertile areas like the Ord valley the trees are grasslands in the wetter valleys. The banks of the Ord, Fitzroy and other rivers are home to a greater variety of vegetation while in sheltered gorges of the high rainfall north there are patches of tropical dry broadleaf forest, called monsoon forests, deciduous vine forest or vine thicket in Australia (often mistakenly called 'dry rainforest'), which were unknown to science until 1965 and are one of the most floristically rich parts of Australia outside the Wet Tropics and southwestern WA. There are also areas of mangrove in river estuaries where the coast is flatter. Our endangered Quoll The gorges of central Kimberley are known for their fossils and for their large colonies of bats. Eighty-mile Beach and Roebuck Bay, which has been described as "one of the most important stop-over areas for shorebirds in Australia and globally". The town of Broome has a flourishing pearling industry which operates around the Kimberley coast. Ancient Aboriginal Rock Art Some of Australia's most prominent indigenous artists and art centres are found in or adjacent to the Kimberley region.
Outback Steakhouse Walkabout Onion Soup: If you have never
Anybody remember when Outback used to have a dish called Cyclone Pasta on their menu? Well, it was one of my favorites. Only it didn't last on the menu for long, much to my dismay. This was the dish that, after a long day on the ship (in a past life, I spent four years in the Navy as a Surface Warfare Officer), I'd pop by Outback and get this to go to enjoy with a glass of wine and Grey's Anatomy. It came with a fabulous garlic bread, that I have yet to replicate, but that's the easy part after figuring out this dish. Oh yes, I forgot to mention that it's been about six years since I last tasted the original recipe, so remembering the flavors was a bit of a challenge! But thanks to the internet, I was able to combine the memories of several folks hankerin' for this dish and came up with something that is pretty close to what I remember! Enjoy! 1 8.5-ounce jar sun-dried tomatoes, julienned and oil packed (with the oil reserved) 2 large chicken breasts, chopped 1 onion, halved and sliced into half-moons 3 cloves fresh garlic, minced 1 cup prosciutto, thinly sliced and cut into thin ribbons 1 cup fresh mushrooms, sliced (I used baby bellas) 1 (16 ounce) box penne pasta, cooked oregano thyme crushed red pepper to taste 1 (16 ounce) jar Classico Sun Dried Tomato Alfredo sauce Italian blend shredded cheese, as much as you like olive oil, as needed Separate the julienned sun-dried tomatoes from the oil in the jar. Heat the oil in a large skillet over medium heat. Add the diced chicken, and any additional olive oil as necessary. Just before the chicken is completely cooked through, add the onions and garlic and saute until crisp-tender. Add reserved sun-dried tomatoes, prosciutto, and mushrooms, and continue to saute. Heat a pot of water to boiling and cook penne as directed. Drain. Meanwhile, add dried herbs and pepper flakes to large skillet, adjusting heat and seasonings as necessary. Add pasta to skillet, stirring to combine. Add entire jar of pasta sauce and heat until slightly thickened and thoroughly combined. Add shredded cheese as desired (one large handful to start) and stir until melted and combined into mixture. Serve hot, and sprinkle a little more cheese over each bowl. Serves 4-6.
