Blood orange season starts in winter and is something of a gift: with its raspberry-like flavor and mesmerizing red color, the citrus fruit is a cheerful break from the hibernation fare most of us are eating at this time of year. It’s also the perfect accent next to pan-seared duck breasts, cutting through the meat’s incredibly rich flavor. Served with rosemary potatoes and a maple mustard sauce, you could think of this as duck a l’orange elevated to the max.

Making pikelets is one of my favourite childhood memories. My sisters and I would hover around while Mum dropped judicious amounts of batter into the electric frying pan. Soon bubbles would appear, which meant it was time to carefully flip them over to reveal their golden bases. A few more minutes and then they were ready to be buttered and drizzled with honey or golden syrup or maybe just eaten plain before they hit the plate. This is the classic pikelet recipe of my youth. It all comes back, the aroma of the pikelets as they sizzle in the buttered pan, to making batch upon batch, more than you could possibly eat, but eat we did. Why is this our best pikelet recipe? All you need is a handful of staple ingredients and twenty minutes to take you from a craving to a plateful of light, fluffy and irresistibly cute pikelets ready to be devoured morning, noon or night! Key ingredients in this pikelet recipe Milk: this unassuming ingredient adds moisture to the pikelets, ensuring there's no rubbery result! Egg: this clever little binding ingredient contributes to the structural integrity of your pikelets. Flour: self-raising flour helps to give your pikelets a little height, plus a soft and airy texture, without needing to add baking powder. It also provides structure to the batter, so the pikelets hold their shape while cooking. Sugar: while enhancing the flavour of your pikelets, sugar also helps to caramelise the outside of your pikelets in the pan, giving them a golden hue. Melted butter: this nifty ingredient helps to prevent sticking and provides a beautiful golden crust when brushed onto the cooking surface. It also adds to the flavour of your pikelets. It is grown in cooler subtropical regions of Japan, Spain, Central China, Korea, Turkey, Russia, and South America. In slightly warmer conditions, Satsuma trees produce fruit that ripens a bit earlier, making them favorable for eager growers. When your satsuma mandarin tree fruits, the flavor and color could vary based on your location. In humid subtropical areas of Florida, fruit could mature internally before the usual outer coloring of maturation appears, hence the name Emerald Green satsuma tangerines where these fruits are commercially sold. It’s important to be gentle when harvesting the fruits, as the rinds are prone to tearing if handled without caution.

I can't count how often I find myself stirring a pan with some mince in it, day to day. Not that this is anything to apologize for: it's easy, quick and comforting. I could probably measure out my life in chilli bowls, and that's no bad thing either. This recipe draws again on a favourite time-saving practice of mine, which is to start off with some paprika-piccante chorizo sausages that give off a fiery orange oil in which to sear and season the mince. Tex-Mex custom decrees that chilli be eaten with — among other embellishments — a handful of grated cheese thrown on top. This is merely an impatient rendering of the same, whereby you simply chop or tear some mozzarella and stir it in to the chilli in the pan, just long enough to let it melt into the meat. If you've got the time, and have managed to think ahead, you could put some baking potatoes into the oven to provide a substantial vessel for the cheesy chilli (it will also make the chilli go further) but I don't think anyone would argue with a bowl of tortilla chips alongside, or indeed a beautiful loaf of bread, freshly sliced for dunking. All I'd add further would be a crisp green salad, sharply dressed and a small cup of chopped fresh coriander for all-round anointing. There is a hint of the days-gone-by sweet trolley about this: it's not as tricksy to make as the arance alla principessa I remember from my childhood, the pudding I always chose on treaty weekend jaunts with my grandparents to the now defunct San Marino off Strathearn Place in what is properly called Tyburnia, but rather a rougher-hewn, contemporarily pared down and more huskily aromatic version of the same. I love these oranges really cold, crispy with caramel and richly dolloped with Greek yoghurt, which means you need to make them enough in advance so that they've got time to chill in the fridge.
