On passe parfois à côté de certaines choses... La recette d'aujourd'hui en est l'illustration 😏 Je l'ai déjà évoqué dans de précédentes recettes, j'aime beaucoup le livre Recettes végétariennes slaves de Daria Sobowiec. C'est une vraie mine d'or pour la cuisine végétarienne d'hiver ! Pour celle d'été - avec les poivrons notamment - aussi, mais ce sont des légumes que j'ai moins de difficultés à accommoder. L'une des recettes du livre est celle de la kasha de sarrasin. Plat symbole de la cuisine russe, il s'agit de grains de sarrasin cuits et agrémentés de légumes, autrement dit le menu parfait au cœur de l'hiver. Si j'aime beaucoup le sarrasin, je dois avouer que l'idée de manger une bouillie (c'est ce que signifie le mot en russe) ne m'enchantait pas... j'avais donc laissé cette recette de côté. Mais c'était sans compter sur le fait que ce plat allait recroiser ma route... Comme beaucoup de passionnés de cuisine et d'histoire de la gastronomie, je suis toujours en alerte 😄 Tout est l'occasion de penser les choses au travers de ce prisme gourmand et le cinéma ou la littérature ne font pas exception. Un écrivain que j'aime beaucoup (et que j'ai découvert après ce livre de cuisine slave), c'est Emmanuel Carrère. Ses textes n'ont rien à voir avec la cuisine mais sont fortement liés à la Russie. C'est même parfois (souvent ?) le thème central ou récurent de ses livres comme c'est le cas pour Limonov ou Un roman russe. Et à plusieurs reprises dans différents textes, Carrère évoque la kasha et le fait qu'il cuisine ce plat à merveille. Il n'en fallait pas plus pour me donner envie de goûter 😊 J'ai donc ouvert à nouveau le livre de cuisine et j'ai reproduit la recette. C'est effectivement très bon ! La saveur ne ressemble en rien à ce que nous connaissons habituellement du sarrasin en France mais c'est également différent de la farine de sarrasin au parfum presque fumé que l'on trouve dans le nord-est de l'Italie. Le goût est très délicat et les légumes incorporés sont ce qui parfume le plus l'ensemble. J'ai pris quelques libertés avec la recette d'origine en utilisant du sarrasin grillé que l'on trouve plus facilement en France et en cuisant le tout dans un bouillon. Mais vous pouvez tout à fait respecter l'original 😊 La kasha peut aussi être un plat sucré, le sarrasin étant alors cuit dans le lait puis parfumé avec un peu de fruits secs ou de confitures... mais cela sera peut-être pour une prochaine fois 😉 Kasha de sarrasin (pour 2 personnes en plat unique) 160 g des grains de sarrasin 1 grande tasse de bouillon de légumes chaud 1 blanc de poireau 1 grosse carotte 3 CS d'huile d'olive Laver le poireau, le couper en deux dans le sens de la longueur puis le tailler en petites demi-rondelles. Laver la carotte, l'éplucher et la couper en petits cubes. Dans une grande casserole, faire revenir la carotte et le poireau dans 2 cuillères à soupe d'huile d'olive. Laisser cuire pendant 7-8 minutes en ajoutant éventuellement un peu d'eau pour éviter que les légumes accrochent. Une fois cuits, retirer les légumes de la casserole et réserver. Verser la cuillère à soupe d'huile d'olive restante, faire chauffer puis ajouter le sarrasin. Faire revenir pendant 3-4 minutes, le temps que les grains de sarrasin commencent à libérer leur parfum. Couvrir avec le bouillon et laisser cuire à couvert pendant une dizaine de minutes, le temps pour le sarrasin d'absorber le liquide. Une fois le sarrasin cuit, ajouter les légumes, bien mélanger et servir très chaud. Avec cette recette je participe au #CataCookingChallenge01 organisé par Catalina du Blog de Cata.
