This is the kind of recipe that throws some people into a panic: it’s got two cooking stages! But never fear. Neither of the stages takes a long time in terms of labour, and you can break up the task: cook the “chicken” mixture up to four days ahead and cut and crumb when you’re ready. In fact, the cooked "chicken" mixture is a great standby to have in the refrigerator. It can be the base for so many things, from a simple breakfast sandwich to a "chicken" Parmigiana. (4 servings) Ingredients: For “chicken” – 2 large chicken stock cubes (or 4 small) 1/4 cup boiling water 1 tsp. soy sauce 1 tsp. Worcestershire sauce 2 tsp. yellow (German) mustard 1 1/2 cups okara 3/4 cup flour 2 tbsp. gluten 1 tsp. salt 1/2 tsp. oregano 1/4 tsp. thyme 1/4 tsp. pepper For crumbing and frying – 1/2 cup dried breadcrumbs 1/2 cup flour 1 tsp. garlic powder 1/2 tsp. baking powder salt and pepper to taste 1 egg 1/2 cup buttermilk (or 1/4 cup milk whisked with 1/4 cup yoghurt) oil for frying Method: 1. Dissolve stock cubes in boiling water. Add soy and Worcestershire sauces and mustard; set aside. Combine okara, flour, gluten, salt, oregano, thyme, and pepper. Add stock mixture, and knead with hands until well combined. 2. Press mixture firmly into a greased cake pan, and cover with foil. Place in a frying pan, and fill frying pan with enough boiling water to come halfway up sides. Cover, and bring to the boil. Reduce heat to medium-high, and cook for about 45 min., until set and firm. Remove from heat, peel off foil, and allow to cool completely. (Mixture will get even firmer as it cools.) 3. In a ziplock back, combine breadcrumbs, flour, garlic and baking powder, and salt and pepper to taste. Whisk together egg and buttermilk. 4. Unmould “chicken” mixture. Cut into small rounds or ovals with a cookie cutter for nuggets, or into strips with a knife for chicken strips. Dip nuggets or strips into egg mixture, and as they’re dipped drop them into the bag. When they’re all done, seal bag, and shake. Fry nuggets or strips in hot oil until golden, and drain on crumpled paper towels. Serve with the dipping sauce of your choice, or in a sandwich with mayo, lettuce and tomato.

If you are just starting out, a student or don't have the room for a nice press, printing intaglio work can be quite a challenge. I wanted to share a technique of pressless printing that I learned a long time ago from my friend, Margaret Craig, who teaches at the Southwest School or Arts in TX. What you need are the normal things you would to print your plate + weights, transparent etching ink base and Golden Medium's Targel clear acrylic medium. Here are some images of my quick setup at home. (You'll see I use some phonebook pages during plate wiping as well.) In the picture above you can see the inks, targel (which you can get in smaller amounts), plates and plexi that I use to mix ink on. I chose a copper and zink plate from my old stash, the other has a deep aquatint on it and the other just a thin line etching. So you can use this technique for a wide variety of plates. The picture below you can see my paper, cheap paintbrush, registration sheets and book that I used as weights. To begin printing, wipe your plate like you normally would. If you have a lot of clear areas on your plate, in other words non-aquatinted areas, roll on a thin coat of transparent base so that your paper does not get glued to the plate. After the transparent base has been rolled on, paint on a thin even coat of Targel with a brush. Place the plate on your registration sheet, paper on top and layer some heavy things on top of it. Tip- learned from Dan Welden's newsletter that instead of tarlatan, you can also use organze silk for wiping your etching plates. If you can get your hands on some, give it a whirl... Supposedly it lasts longer than tarlatan. Back to printing- Let the plate dry for an hour or more, depending if you are in a humid or dry environment. We have really dry indoor air in Germany so dry time was a couple of hours. This is a good time to get a snack, do some exercises, watch an episode of your favorite tv show or go play with your baby/dog or husband. After the acrylic has dried, you can peel the paper off the plate and the ink will stick to the paper. If you peel too soon, as I do in the video, the targel is still wet and will not completely adhere to the paper. When the acrylic is dry, the plate will peel off quite easily- be mindul of peeling your edges though. If you got targel around the edges, it might not start peeling and will tear instead. The reason that the technique works is that the acrylic dries much faster than the etching ink. We are using Targel because it has "an extremely resinous, syrupy, stringy and tar-like consistency" as described on the Golden website. It's so sticky that it pulls the ink from the grooves of your etching plate when you separate the paper from the plate. Now, this technique obviously is not the fastest in the world, it will take you anywhere from an hour or more to pull an image, but compared to no press at all, it is better than nothing. If you commit to print an edition this way, I would advise to store your ink under ceramwrap on a glass or plexi. You could also fold the mixed ink in foil/waxpaper and keep it in the fridge. I have not tried it, but you could maybe try to speed up the process by blowdrying the paper on the back to dry the acrylic faster. Here are images of the cow print. You can see the edges have some paintbrush marks, where I did not paint the targel on very evenly, and the middle has a spot where the targel did not adhere to the paper. That could have been either because I peeled the paper off before the gel had dried or because there was no clear etching base on that spot and the gel adhered to the plate instead of the paper. Maybe even heavier weights would have solved the problem. Best thing is to do a couple of practice prints- carefully coating the plate and to figure out how long you need to dry the print before peeling the paper off the plate. Here is a closeup of the same print. I printed the cow two times, so this is a different print compared to the one that you see in the video. For another variation for the adventurous printers out there, you can also print on just the targel without paper. Do all the steps just as above, but paint a slightly thicker coat of targel on top. Leave the paper and weights off the plate and just let it airdry. When the targel is dry, you can peel the skin off the plate, with your printing ink attached to it. Now you have a transparent, stretchy print, that you can let dry like that, you can stretch it over things or distort it in other ways. Margaret has done so in some of her works, you can see an example here. Troubleshooting. If you get spots in your print after you peel it off, try adjusting these things: Your targel had not dried yet. Clean off any targel remains from your plate and start again and let your plate dry longer. Your paper and plate should separate fairly easily when you peel them apart -always be careful around the edges. You did not cover your plate evenly with the clear etching ink and the acrylic got stuck to your plate instead of the paper. Clean plate, ink your plate again and be careful to cover the whole plate evenly. You did not cover cover the plate evenly with targel, and some of the ink remains on your plate. Clean plate, ink your plate again and be careful to cover the whole plate with an even coat of gel. Be careful not to gob it on too thick either. There was an air bubble in between your paper and plate. Smooth paper on the plate starting from one edge. I hope this posting has been interesting for you. This QFT template has everything you need already in one place - all you have to do is copy and paste your prompt as an image or video and get folks wondering! Give each group a paper and markers and there is NO OTHER PREP. The strategy is a favorite among students and really inspires curiosity and thoughtful discussions. This template can be copied and re-used in one classroom as many times as you would like. I use it to introduce a new phenomenon for almost every new science unit I teach! This QFT Template comes on Google Slides. You can access Google Slides for free with a Gmail account.  When you first access your QFT Template you will be prompted to make your own personal copy of the resource. Once it is downloaded you are ready to add your prompt and share it out.  Be sure to investigate the expectations for the QFT process HERE. I like to split my students into groups of 3 or 4, give each group a poster paper and a few different color markers to record their questions, and then get them questioning. I like to give as much time with the prompt as students need. There is always a plateau of questions and then a “second wave”... Be sure to provide wait time so you get access to the fantastic second wave of student thinking! Once groups have narrowed their questions down to a “Top 3”, I like to post them as Driving Questions to come back to through the unit. This slide is INTERACTIVE which means that you can edit the the topic text box and the prompt. It does NOT allow you to edit the backgrounds, images, or directions.  This QFT Template can be used for ANY class, ANY topic, and AS MANY TIMES as you like. Vintage Beautiful Temari Ball in a Glass Jar The jar is marked "Echigawacho, Shiga Prefecture" per Google translate. It was a souvenir but that does not make it less beautiful or intricate in the multicolor chrysanthemum pattern done in silk thread, There are some spots on the glass that have rubbed against a rough surface. Scratches, but not... They are difficult to see and are pictured in the images and video above the best I could. The jar is approximately 5 1/2 inches diameter at the widest point. It is 6 inches tall. The lid did not easily pull off, so I left it alone. {Be warned, this a long post but please bare with me and read to the end. I would appreciate some feedback and food for thought.} When I first started teaching, my room had the typical red light, green light system. I was not excited about using it at all. However, I got my job right before school started, it was in my room already and lets just be honest I didn't have time to think of something else. So there it was. It stayed there all year. I never liked it. The only reason a child would go to it would be to clip down...to a negative area with a consequence. I never felt like it solved any problems. I did not like it. So like any crazy teacher would, I got on Pinterest! :) And low and behold, everywhere I looked I saw the clip chart. A student could move up or down! I loved the idea of having rewards for those kiddos that are always doing right. I had a super cute one. Bright colors, fun clip art and all! You are all probably familiar with a clip chart similar to this that you have seen all over Pinterest... Image from Pinterest So, I started that year...and it only took a few months for me to decide something wasn't working. Parents were constantly asking what color their lovely was on. The emphasis was way too much on the color and not what did you learn today. Kids were broken down when they were constantly on a negative color. {no matter how hard I would try to keep them off of it...but to be consistent for the other kids...} So, the next year (last year) I got rid of sending home daily reports. I loved it. Behavior was handled in the classroom. Kids could make mistakes and we wo uld move on. (Major problems or repetitive problems, parents were made aware) But, that darn clip chart was still there. The same kids moved up and the same kids moved down. No matter how much I tried to change it. And let me tell ya...the kids knew where each child was on that chart. Anyone that walked in the room knew. Everyone knew. Talk about a Public Walk of Shame. Just imagine sitting in that faculty meeting with the super cute clip chart with every one's name hanging from the cutest ribbon in the front and center of the room. People are being called to pull their clip up for participating and collaborating. Way to Go! But then, your name is called. You hear your principal saying "this is not the time to be Pinteresting, pull your clip down." All eyes on you as you walk to the front to clip down. You walk away defeated, ashamed and just want to go home... A changing moment for me was when a sweet little girl said she could no longer play with a certain friend because this friend was always on a bad color. So what was the topic of conversation at home? Obviously not learning. Where was the emphasis put? Something had to change. Then I read an article that screamed AH-HA to me. I am not crazy. Others feel this way. And I promise you, even if you don't agree with me, this article is great food for thought. Click HERE to Read It! So my brain has been turning and I have been doing some research (pinterest and google count right?!). Then I started thinking when I was in school what was the behavior system? There was no daily behavior report, rewards or bribing. However, I don't remember us acting like zoo animals every day. Something must have kept order. Of course, it was the teacher! If we got a treat it was because my teacher wanted to give us a treat...everyone got a treat and just because. They were many days, I talked way too much (hard to believe right?!), didn't listen or follow directions but did I have to do a public walk of shame? NO! And if I did, I honestly think my experience in school would have been different. I never left feeling like my teacher just doesn't think I do anything right, why am I even trying? How do you think those kids feel every day when they are always on a warning or something negative. What about those kids that can't seem to make it past 8 in the morning without messing up? So why am I doing that now? Is it really working? I know you are probably thinking...When I was growing up my parents expected me to do what the teacher said. The teacher is always right. Parents don't respect teachers in front of their kids anymore. Parents don't care if their kids act up so they do act up. I need something. How do you think parents feel if every day they see their child's behavior report and it's yellow or not above green. They just may start thinking, well that teacher just doesn't like my kid. News Flash! Parents know their kid is not perfect. They might talk out of turn, get out of their seat when they are not supposed to, forget to raise their hand but is it necessary to constantly make it seem like a major issue? So, when you call home about something major, they brush you off. I don't think anyone intentionally does this but I can see how it would elevate to this level. {side note: Yes, I believe parents should be involved in major behavior challenges, repetitive challenges and sometimes you may need to do an individual private behavior goal with a student) I am going to be the first to admit, I do not have the answers. I just know I do not want the PUBLIC Walk of Shame in my classroom. I am willing to try something new. So, back to Pinterest and searching... I started looking at youtube and checking out some videos of Whole Brain Teaching. WOW. I was floored. (I actually found it on a board I pinned ages ago...) Now, we all know our kiddos love to talk and move. This gives them lots of opportunity and have some fun! The scoreboard is a neat idea. It is either a 1 second party or a Mighty Groan. If you have some students off track call the rule number..the whole class repeats the rule...the behavior instantly stops to repeat with class and not one single student is singled out. I am still looking into WBT and have ordered the book to read some more information on it. I know that I am not a complete fan of the exact rules {Keep your teacher happy just rubs me wrong but many people like it...to each their own. :)) so I switched mine up a bit. Rule 1: Listen when someone is talking. I purposefully did not make it say teacher. I want my students to know they are expected to listen no matter who is talking, even their partner. Working on good conversation skills. {motion- cup hand over ear} Rule 2: Follow directions quickly. {motion-make your hand like it is a fish swimming fast} Rule 3: Raise your hand to speak. {motion-raise hand to high and making the talking motion} Rule 4: Make smart choices {motion-point to brain} Rule 5: Respect others, respect yourself and respect our school. {hands out, point to self, point to the floor} You can grab a version of my rules {here!} I plan to use these similarly to WBT. I am not exactly sure how my classroom management will look at this point. I do know that it will not involve a public behavior system. To make it clear, I am against the public display of behavior. I do believe parents need to be involved. I will not think less of you for using a clip cart. Every classroom is different and each teacher has the power to choose how to run their classroom.
