I can never get enough of a Sichuan-style red-braise with chili bean paste (made from fava beans and chili oil), fermented black beans, soy sauce, wine, and sugar. In this post I’m getting into the nitty gritty details of all things macaron. I make macarons using the French method, which means using french or uncooked meringue. Macarons can also be made with Italian meringue, where the meringue is cooked with a hot sugar syrup, or Swiss meringue, where the egg white and sugar mixture is cooked over a bain marie before whipping. Italian and Swiss meringues are considered more stable, but making macarons this way involves extra steps. In my opinion, French meringue gets the job done just fine without making extra dishes and taking extra time.
