When we were in Georgia recently, Mike's sister Becky took us to Mellow Mushroom, a pizza restaurant in Rome, Georgia. I had heard about this place because Mike and our son Adam had eaten there last year on their trip to The Master's in Augusta, and Mike had eaten there a second time when he visited Becky and his mom. I was happy to finally have the chance to eat there since Mike and Adam had given the pizza rave reviews, and I LOVE me a good pizza! Based upon their past visits, Becky and Mike recommended the Holy Shiitake Pie. Here is the description from the menu: Holy Shiitake Pie, Olive oil and garlic base, Shiitake, button, and Portobello mushrooms, caramelized onions, mozzarella and MontAmore cheeses. Drizzled with garlic aioli and black truffle oil. Garnished with fresh chives and shaved Parmesan. It was delicious! I could not get the taste of that pizza off my mind, so I used Google to find a copy cat recipe for Mellow Mushroom crust. It turns out that the secret ingredient to make the crust slightly sweet is molasses. Another tip was to brush the crust around the edge with melted garlic butter as soon as the pizza came out of the oven and to sprinkle Parmesan cheese on the melted garlic butter. Next time you make pizza, try those two tips to make your crust amazing! Using some copy cat recipes from the Internet, I tried to recreate the flavors of Holy Shiitake Pie, and the results were very satisfying. I started out with pre-made mini pizza crusts from Aldi. They come three to a package, and I had purchased two packages so the granddaughters could make their own pizzas for lunch last Saturday when they were visiting. Mike and I also had pizza for lunch that day, so I had two crusts leftover. To get the slightly sweet taste of Mellow Mushroom's crust, I blended some molasses with olive oil and brushed the entire crust with the mixture. Next, I mixed olive oil and truffle flavored oil and brushed that on the middle of the pizza for the sauce base. That truffle flavored oil added a very tasty layer to this pizza. I may spring for a small bottle of real truffle oil in the near future just to see how amazing that would be. I caramelized one onion, and sauteed sliced crimini mushrooms and put those on the two pizza crusts. I topped the mushrooms and onions with grated mozzarella and freshly grated Parmesan cheese and baked the pizzas according to the package directions on the crust. As soon as the pizzas came out of the oven, I brushed the crusts with garlic butter and sprinkled canned Parmesan on top of the butter. The final touch was garlic aioli that I made with mayonnaise, freshly grated garlic, and a little lemon juice, salt and pepper. I drizzled that over the warm pizza. Yum. Yum. Yum! That pizza was full of garlic, mushroom, and onion flavors, and the crust was slightly sweet from the molasses. It may not have been an authentic Mellow Mushroom Holy Shiitake Pie, but it was a darn good imitation! Mellow Mushroom is a franchise, and there is one shop in Iowa at Coralville Mall, near Iowa City. If you would like to check out Mellow Mushroom's web site go here. You can check out their menu to see if there is a pizza you would like to try and copy. They have lots of imaginative toppings, and the names of the pizzas are fun and funky, just like the restaurant. This booth is at the Rome, Georgia Mellow Mushroom.
