A beautiful expanse of unencumbered nature stands guarded inside a wide-mouthed bullfrog, while a seaside city burns with brilliant flames in the fabric of a heroine’s dress. Each scene inspires the viewer to pause, making sure they haven’t missed a key character that might unlock the work’s tangled narrative. Необходими продукти: За тестото: Около 1кг. брашно 1 кубче свежа мая (около 40 г) 1 ч.л. захар 1 ч.л. сол 4 яйца 1 чаша хладка вода 350 гр. сирене, наронено 200 г разтопено масло (маргарин или предпочитана растителна мазнина) За глазурата: 1 яйце, разбито Римейк - април, 2014 Ingredients: For the dough: About 1kg. all purpose flour 1 cube fresh yeast (about 40 g) 1 tsp sugar 1 tsp salt 4 eggs 1 cup lukewarm water 350 g cheese, shredded 200 g melted butter (margarine or any preferred vegetable oil) For glaze: 1 egg, beaten Начин на приготвяне: Отделяме една чаша от брашното – за доомесване. В купа разтваряме в хладката вода маята, добавяме захарта и около ½ чаша брашно, разбъркваме до гладка смес и оставяме за няколко минути да втаса. В отделна купа смесваме 2 чаши брашно и солта. В голяма купа или купата на електрически миксер разбиваме на средна скорост яйцата и добавяме към тях втасалата смес с маята. Добавяме постепенно и смесеното със солта брашно. Добавяме останалото брашно поетапно, защото сместа може и да не поеме цялото количество, докато се получи меко и еластично тесто, което се отделя от стените на купата. Ако тестото е прекалено меко, добавяме 1-2 с.л. брашно, а ако е твърдо, добавяме 1-2 с.л. хладка вода. Method: Leave aside a cup of flour for bench work. In a bowl dissolve yeast in lukewarm water, add sugar and about ½ cup flour, stir until smooth and leave aside for few minutes to rise. In a separate bowl mix 2 cups flour and salt. In a large bowl or bowl of electric mixer beat on medium speed eggs and add the risen yeast mixture. Add gradually mixed flour and salt. Add remaining flour gradually, because the mixture might not take the whole amount until a soft and elastic dough forms, which separates from the walls of the bowl. If dough is too soft, add 1-2 tablespoons flour, if it’s hard, add 1-2 tablespoons lukewarm water. Изсипваме тестото върху равна набрашнена повърхност и доомесваме. Pour the dough onto a flat floured surface and knead. Spread 1/3 of butter all over the crust and sprinkle with 1/3 of shredded cheese. Сгъваме кората като плик за писмо. Fold crust as an envelope. Обръщаме сгънатат кора обратно (прегънатата страна да остане отдолу). Turn folded crust seam side down. Разточваме до първоначалните размери, отново намазваме с втората 1/3 част от маслото и втората 1/3 част от нароненото сирене. Roll to the initial crust size, spread the second 1/3 of the butter and the second 1/3 of the shredded cheese. И отново прегъваме кората навътре като плик. Fold again as an envelope. Отново обръщаме кората (прегъната страна да остане отдолу), разточваме до първоначалните размери на кората, намазваме с последната част от маслото и поръсваме с последната част от сиренето. Turn again folded crust seam side down, roll initial size, spread with the last part of the butter and sprinkle with the last part of the cheese. Сгъваме отново като плик. Получава се дебела кора с почти квадратна форма. Fold again as an envelope. The crust is thick and almost square shaped. Без да разточваме кората, обръщаме с прегънатата част надолу в подходяща по размер тава, предварително покрита с хартия за печене или намаслена добре и поръсена с брашно. Without rolling the crust, place the folded crust seam side down into a suitable baking pan, previously lined with baking paper or oil well and sprinkled with flour. Четириъгълната тавата, която аз си бях приготвила, се оказа прекалено голяма и се наложи да сместя творението си в кръгла тава, но това не развали никакси крайния резултат :) The rectangular baking pan, which I have prepared, has been too large and I’ve needed to place my crust into a round pan, but that does not spoil the final result at all hopefully :) Нарязваме прегъната кора на триъгълници по следния начин: първо по черните линии, след това по червените и последно по сините. Притискаме леко с края на точилката всяко триъгълниче по средата - да се разтворят по-добре пластовете тесто. Cut the folded crust into triangles as follows: first the black lines, then the red and at last the blue ones.Lightly press with a rolling-pin’s end in the middle of each triangle - to let dough layers open better. Аз толкова се бях отплеснала по избора на що годе подходяща тава, че съм пропуснала да снимам тутманика нарязан… Тутманикът втасва, докато се пече и това е едно от големите предимства на тая рецепта. Намазваме нарязания тутманик с разбитото яйце, поставяме на горна скара и печем в студена фурна, на долен реотан на 170 С за около 30 минути. Проверяваме внимателно дали е запечен леко отдолу, преместваме на долна скара и довършваме печенето на грил на 170 С за още около 10 минути или до златисто кафяво. ***Ако фурната не е с разделно нагряване, печем в студена фурна на 170С на средна скара, като през първите 30 минути тутманикът е покрит с хартия за печене или алуминиево фолио, след което отстраняваме хартията и печем още 10-ина минути или до златисто кафяво. I seem to have been so busy to wonder what kind of pan to use that I’ve failed to make photos of the cut crust... The Tutmanik rise while baking and that’s one of the greatest advantages of this recipe. Spread cut crust with beaten egg, put on upper rack and bake in a cold oven, on oven’s bottom bake element (sorry, I don’t know the exact word) at 170C for about 30 minutes. Check carefully whether it is slightly roasted below, move to lower rack, turn on the oven’s grill and finish baking at 170C for another 10 minutes or until golden brown. *** If the oven is not supplied with separatebake elements, bake in a cold oven on middle rack at 170C, keeping for the first 30 minutes Tutmanik covered with baking paper or cooking foil, then remove paper and bake another 10 minutes or until golden brown. Сервираме топъл, дори :) горещ - умопомрачително вкусен е!! Serve warm, even:) hot – the Tutmanik is tremendously delicious!! Рецептата ни е любима и я приготвям вкъщи редовно, но обикновено не оцелява до снимки :) Този път успях да открадна един-два кадъра от последния "римейк" - преди тутманикът безследно да е изчезнал...
